    As part of the NAHB Research Center Industry Partnership, Southface partnered with Martin Dodson Builders and the Serenbe community on the construction of a new test home in the suburbs of Atlanta, GA in the mixed humid climate zone. The most recent subdivision within the Serenbe community, the Nest, will contain 15 small footprint cottage style homes, and Southface has selected Lot Nine, as the test home for this study. This Nest subdivision serves as a project showcase for both the builder partner and the Serenbe community as a whole. The planning and design incorporated into the Nest cottages will be implemented in each home within the subdivision. These homes addresses Building America Savings targets and serve as a basis of design for other homes Martin Dodson plans to build within the Serenbe community.

    Occupational health and safety research and prevention programs in developing countries have focused almost exclusively on large-scale industries. The informal sector--especially home-based arts and crafts industries such as pottery, jewelry, weaving, and woodworking, as well as other cottage industries--are a major and neglected part of the economies of developing countries. These industries have many hazards, including lead, silica, toxic woods, cadmium, dyes, and ergonomic problems. Since the work is often done in the home and can involve whole families, the entire family, including children, can be at risk. Prevention programs involving training and education about the hazards, suitable precautions, and development of safer substitutes are needed. This will also require training of local health care providers in the diagnosis and treatment of occupational diseases related to hazards in these cottage industries. PMID:8844041

    The appearance in England from the 1850s of 'cottage hospitals' in considerable numbers constituted a new and distinctive form of hospital provision. The historiography of hospital care has emphasised the role of the large teaching hospitals, to the neglect of the smaller and general practitioner hospitals. This article inverts that attention, by examining their history and shift in function to 'community hospitals'within their regional setting in the period up to 2000. As the planning of hospitals on a regional basis began from the 1920s, the impact of NHS organisational and planning mechanisms on smaller hospitals is explored through case studies at two levels. The strategy for community hospitals of the Oxford NHS Region--one of the first Regions to formulate such a strategy--and the impact of that strategy on one hospital, Watlington Cottage Hospital, is critically examined through its existence from 1874 to 2000. However, extrinsic factors such as package, label claims, and brand name may also influence liking and have not been studied. The objective of this study was to evaluate the role of package attributes and brand on the liking of cottage cheese. A conjoint survey with Kano analysis (n=460) was conducted to explore the effect of extrinsic attributes (brand, label claim, milkfat content, and price) on liking. Following the survey, 150 consumers evaluated intrinsic attributes of 7 cottage cheeses with and without brand information in a 2-d crossover design. Results were evaluated by 2-way ANOVA and multivariate analyses. Milkfat content and price had the highest influence on liking by conjoint analysis. Cottage cheese with 2% milkfat and a low price was preferred. Specific label claims such as "excellent source of calcium (>10%)" were more attractive to consumers than "low sodium" or "extra creamy." Branding influenced overall liking and purchase intent for cottage cheeses to differing degrees. For national brands, acceptance scores were enhanced in the presence of the brand. An all-natural claim was more appealing than organic by conjoint analysis and this result was also confirmed with consumer acceptance testing. Findings from this study can help manufacturers, as well as food marketers, better target their products and brands with attributes that drive consumer choice. PMID:26519972

    The Wold Cottage meteorite (fell, 1795), as is well known, played an important part in meteorites being accepted as stones from the sky. In most cases, the very select group of people who have been privileged to witness any meteorite fall, let alone one as important as Wold Cottage, enjoy a moment's fame but then disappear into obscurity. In this respect, Wold Cottage is very different; Edward Topham, the man who reported the fall and who became the meteorite's publicist, was already very well known for many other reasons. This fact contributed substantially to the evidence provided by his workmen being accepted, following two public exhibitions of the meteorite, the second after sworn testimonies were obtained. Here we explore Topham's background in order to reveal his character, particularly the value he placed on truth. When he passed the meteorite over to a public museum, he did so in the belief that he was acting for the benefit of posterity. At a time when the idea of meteorites being extraterrestrial was still controversial, the Wold Cottage stone vitally prompted the observation that specimens from different parts of the globe closely resembled each other, thus stimulating the crucial chemical analyses which verified that they were indeed related. During its first twenty years on Earth, the Wold Cottage meteorite was a prized specimen, a public attraction and sought after for scientific teaching purposes. In researching Wold Cottage, we have been able to discover information about many of the personalities who were involved in providing and studying the first few meteorites to become available for scientific research. The Wold Cottage story gives an interesting perspective on the cultural scene at the end of the eighteenth and beginning of the nineteenth centuries when there was no clear distinction between the arts and sciences, and meteoritics was the prerogative of often rather flamboyant gentlemen.

    In the past 2 decades, total sales of cottage cheese have declined 17% despite increases in sales for low-fat cottage cheese. There are no recent published studies investigating consumer preferences for cottage cheese. This study was conducted to identify and define sensory characteristics of commercial cottage cheese and to compare 2 approaches for characterizing consumer preferences: traditional preference mapping and a new composite qualitative approach, qualitative multivariate analysis (QMA). A sensory language was identified to document the sensory properties (visual, flavor, and texture) of cottage cheeses. Twenty-six commercial cottage cheeses with variable fat contents (4, 2, 1, and 0% fat) were evaluated by trained panelists using the sensory language. Eight representative cottage cheeses were selected for consumer acceptance testing (n = 110) and QMA with consumer home usage testing (n = 12), followed by internal and external preference mapping to identify key drivers. Principal component analysis of descriptive data indicated that cottage cheeses were primarily differentiated by cooked, milkfat, diacetyl, and acetaldehyde flavors and salty taste, and by firmness, smoothness, tackiness, curd size, and adhesiveness texture attributes. Similar drivers of liking (diacetyl and milkfat flavors, smooth texture, and mouthcoating) were identified by both consumer research techniques. However, the QMA technique identified controversial distinctions among the cottage cheeses and the influence of brand and pricing.     A token economy designed to modify the behavior of 125 adolescent males committed to a state correctional institution was implemented in the boys' cottages, focusing on social behavior (peer interaction), rule following, and task completion. The program was sequentially introduced in a multiple-baseline design in three independent cottages; a fourth group served as a comparison cottage. Appropriate behavior increased when the token program was introduced in each cottage. Data were collected for 14 months. Thus, the long-term effects of initial behavior change were assessed.   7. Pretreatment of Cottage Cheese to Enhance Biogas Production

    This study evaluated the possibility of pretreating selected solid fraction of an anaerobic digester treating food waste to lower the hydraulic retention time and increase the methane production. The study investigated the effect of different pretreatments (thermal, chemical, thermochemical and enzymatic) for enhanced methane production from cottage cheese. The most effective pretreatments were thermal and enzymatic. Highest solubilisation of COD was observed in thermal pretreatment, followed by thermochemical. In single enzyme systems, lipase at low concentration gave significantly higher methane yield than for the experiments without enzyme additions. The highest lipase dosages decreased methane yield from cottage cheese. However, in case of protease enzyme an increase in concentration of the enzyme showed higher methane yield. In the case of mixed enzyme systems, pretreatment at 1 : 2 ratio of lipase : protease showed higher methane production in comparison with 1 : 1 and 2 : 1 ratios. Methane production potentials for different pretreatments were as follows: thermal 357 mL/g VS, chemical 293 mL/g VS, and thermochemical 441 mL/g VS. The average methane yield from single enzyme systems was 335 mL/g VS for lipase and 328 mL/g VS for protease. Methane potentials for mixed enzyme ratios were 330, 360, and 339 mL/g VS for 1 : 1, 1 : 2, and 2 : 1 lipase : protease, respectively. PMID:24995288

    Established in 1887, Kew Cottages was Australia's oldest and largest specialised institution for people with intellectual disability. Kew Cottages was originally designed as a place of benevolent care and education for children. However its secluded location, adjacent to a 'Lunatic Asylum,' and its use of physical security measures resulted in its reputation as a place of incarceration. This viewpoint emerged through oral history testimony collected as part of the Kew Cottages History Project during 2005-08. Oral histories, which were recorded from people closely associated with Kew Cottages, reveal that despite the introduction of reforms in the mid-twentieth century to accord residents greater freedoms, poor living conditions, strict regimentation, violence, and abuse, all contributed to a prison-like environment within the institution.     Mathematical models were developed and evaluated for growth of psychrotolerant pseudomonads in chilled milk and in cottage cheese with cultured cream dressing. The mathematical models include the effect of temperature, pH, NaCl, lactic acid and sorbic acid. A simplified cardinal parameter growth rate model was developed based on growth in broth. Subsequently, the reference growth rate parameter μref25°C-broth of 1.031/h was calibrated by fitting the model to a total of 35 growth rates from cottage cheese with cultured cream dressing. This resulted in a μref25°C-cottage cheese value of 0.621/h. Predictions from both growth rate models were evaluated by comparison with literature and experimental data. Growth of psychrotolerant pseudomonads in heat-treated milk (n=33) resulted in a bias factor (Bf) of 1.08 and an accuracy factor (Af) of 1.32 (μref25°C-broth), whereas growth in cottage cheese with cultured cream dressing and in non-heated milk (n=26) resulted in Bf of 1.08 and Af of 1.43 (μref25°C-cottage cheese). Lag phase models were developed by using relative lag times and data from both the present study and from literature. The acceptable simulation zone method showed the developed models to successfully predict growth of psychrotolerant pseudomonads in milk and cottage cheese at both constant and dynamic temperature storage conditions. The developed models can be used to predict growth of psychrotolerant pseudomonads and shelf life of chilled cottage cheese and milk at constant and dynamic storage temperatures. The applied methodology and the developed models seem likely to be applicable for shelf life assessment of other types of products where psychrotolerant pseudomonads are important for spoilage.     Milk whey and its derivatives are commonly used to fortify food products. A study was done on the effect of seven cottage cheese (sour/sweet whey mixture) inclusion concentrations (5, 7.5, 10, 12.5, 15, 17.5 and 20 %) on the mechanical properties of white wheat bread dough using a texture analyser. Cottage cheese protein content was 10.05 %. Loaf bread made using the 7.5, 12.5 and 17.5 % cottage cheese concentrations showed crumb quality similar to the control in the 12.5 and 17.5 % treatments, but more open and less homogeneous in 7.5 % treatment. Cottage cheese concentration affected bread volume, with the higher concentrations lowering volume by up to 50 %, in response to increased water retention. Sensory analysis showed bread containing 7.5 % cottage cheese was not different from the control, with an 83.33 % acceptance rate. The 7.5 % concentration was optimum for white wheat loaf bread production since its mechanical and sensory properties were most similar to the control. PMID:25328228

  13. International market assessment of stand-alone photovoltaic power systems for cottage industry applications

    The final result of an international assessment of the market for stand-alone photovoltaic systems in cottage industry applications is reported. Nonindustrialized countries without centrally planned economies were considered. Cottage industries were defined as small rural manufacturers, employing less than 50 people, producing consumer and simple products. The data to support this analysis were obtained from secondary and expert sources in the U.S. and in-country field investigations of the Philippines and Mexico. The near-term market for photovoltaics for rural cottage industry applications appears to be limited to demonstration projects and pilot programs, based on an in-depth study of the nature of cottage industry, its role in the rural economy, the electric energy requirements of cottage industry, and a financial analysis of stand-alone photovoltaic systems as compared to their most viable competitor, diesel driven generators. Photovoltaics are shown to be a better long-term option only for very low power requirements. Some of these uses would include clay mixers, grinders, centrifuges, lathes, power saws and lighting of a workshop.

    Globally, there is a trend for healthy food products, preferably incorporating natural bioactive ingredients, replacing synthetic additives. From previous screening studies, extracts of Foeniculum vulgare Mill. (fennel) and Matricaria recutita L. (chamomile) maintained nutritional properties and improved the antioxidant activity of cottage cheese. Nevertheless, this effect was limited to 7 days. Accordingly, aqueous extracts of these plants were microencapsulated in alginate and incorporated into cottage cheese to achieve an extended bioactivity. Plain cottage cheese, and cheese functionalized by direct addition of free decoctions, were prepared and compared. Independently of plant species, "functionalization type" factor did not show a significant effect on the nutritional parameters, as also confirmed in the linear discriminant analysis, where these parameters were not selected as discriminating variables. Furthermore, samples functionalized with microencapsulated extracts showed higher antioxidant activity after the 7th day, thereby demonstrating that the main purpose of this experimental work was achieved.   20. Combining cottage cheese whey and straw reduces erosion while increasing infiltration in furrow irrigation

    Loose straw in irrigation furrows can decrease irrigation induced erosion, and acid cottage cheese whey can increase soil aggregate stability and soil infiltration. A field study was conducted at two sites where these materials were compared alone and in combination to determine their effectiveness in increasing infiltration and reducing irrigation induced erosion. Straw was applied by hand and whey was applied by gravity flow down irrigation furrows, 76 cm apart, and the field was planted to sweet corn (Zea Mays L.). Straw + whey was the most effective treatment for controlling erosion and sediment loss. Seasonal infiltration was significantly higher for straw + whey than for other treatments at the first site, and all three treatments increased infiltration over that of the control at the second site. These studies showed that two inexpensive agricultural byproducts, cottage cheese whey and straw, applied to irrigation furrows of different slopes can significantly reduce soil loss and increase infiltration.

    Milk and Queso Blanco cheese were exposed to irradiation with doses of 1, 2, 3, 5, and 10 kGy to investigate the irradiation effect on α- and β-casein using a capillary electrophoresis. αS1-Casein to total protein ratio in raw milk was decreased from 19.63% to 8.64% by 10 kGy of gamma irradiation. The ratio of αS1- to αS0-casein was also decreased from 1.38 to 0.53, which showed αS1-casein is more susceptible to gamma irradiation than αS0-casein. Similarly, αS1-casein to total protein ratio in Queso Blanco cheese was decreased from 17.48% to 7.82% and the ratio of αS1- to αS0-casein was decreased from 1.16 to 0.43 by 10 kGy of gamma irradiation. Dose-dependent reduction of βA1-casein was also found. βA1-Casein to total protein ratios in raw milk and Queso Blanco cheese were decreased from 22.00% to 14.16% and from 21.96% to 13.89% after 10 kGy, respectively. The ratios of βA1- to βA2-casein were from 1.10 to 0.64 and 0.93 to 0.57 in milk and Queso Blanco cheese, respectively. However, αS0-, βB-, and βA3-casein increased by irradiation at 10 kGy. The results suggest that αS1-casein and βA1-casein were more susceptible to gamma irradiation, and may be related to the reduction of milk allergenicity caused by gamma irradiation.

    Recovery of whey proteins with improved water holding capacity, reduction of losses of curd fines as well as improvement of ability of curd to retain moisture appear some crucial approaches to result in a product with comparatively higher yield. In the present study, endeavours were made to improve the yield of direct acidified cottage cheese through the addition of κ-carrageenan in milk before heat treatment and tetrasodium pyrophosphate (TSPP) immediately before renneting. κ-carrageenan was added at the levels of 0.005, 0.015 and 0.025% and their effect on the total protein and whey proteins contents, moisture retention and the resultant curd yield as well as the quality of cottage cheese was studied. The study showed that addition of κ-carrageenan at 0.015% level followed by heat treatment at 90 °C for 5 min significantly (P < 0.01) increased the curd yield to 13.8% against 12.2% for the control. It was also observed that addition of κ-carrageenan at the level of 0.015% significantly (P < 0.01) increased the whey proteins and total protein contents to 14.8 and 88.5% against 73.4% and 1.2%, respectively with improved (P < 0.01) moisture retention of 75.4% as compared to 74.4% for the control. However, the study showed that addition of tetrasodium pyrophosphate (TSPP) at the levels of 0.02 to 0.08% neither had any effect on the recovery of whey proteins and moisture retention as well as the consequent curd yield nor the sensory quality of cottage cheese.   3. The Cottage Grove fault system (Illinois Basin): Late Paleozoic transpression along a Precambrian crustal boundary

    The Cottage Grove fault system in southern Illinois has long been interpreted as an intracratonic dextral strike-slip fault system. We investigated its structural geometry and kinematics in detail using (1) outcrop data, (2) extensive exposures in underground coal mines, (3) abundant borehole data, and (4) a network of industry seismic reflection profiles, including data reprocessed by us. Structural contour mapping delineates distinct monoclines, broad anticlines, and synclines that express Paleozoic-age deformation associated with strike slip along the fault system. As shown on seismic reflection profiles, prominent near-vertical faults that cut the entire Paleozoic section and basement-cover contact branch upward into outward-splaying, high-angle reverse faults. The master fault, sinuous along strike, is characterized along its length by an elongate anticline, ???3 km wide, that parallels the southern side of the master fault. These features signify that the overall kinematic regime was transpressional. Due to the absence of suitable piercing points, the amount of slip cannot be measured, but is constrained at less than 300 m near the ground surface. The Cottage Grove fault system apparently follows a Precambrian terrane boundary, as suggested by magnetic intensity data, the distribution of ultramafic igneous intrusions, and patterns of earthquake activity. The fault system was primarily active during the Alleghanian orogeny of Late Pennsylvanian and Early Permian time, when ultramatic igneous magma intruded along en echelon tensional fractures. ?? 2004 Geological Society of America.

    The effect of high-hydrostatic-pressure processing (HPP) on the survival of a 5-strain rifampicin-resistant cocktail of Listeria monocytogenes in Queso Fresco (QF) was evaluated as a postpackaging intervention. Queso Fresco was made using pasteurized, homogenized milk, and was starter-free and not pressed. In phase 1, QF slices (12.7 × 7.6 × 1 cm), weighing from 52 to 66 g, were surface inoculated with L. monocytogenes (ca. 5.0 log10 cfu/g) and individually double vacuum packaged. The slices were then warmed to either 20 or 40°C and HPP treated at 200, 400, and 600 MPa for hold times of 5, 10, 15, or 20 min. Treatment at 600 MPa was most effective in reducing L. monocytogenes to below the detection level of 0.91 log10 cfu/g at all hold times and temperatures. High-hydrostatic-pressure processing at 40°C, 400 MPa, and hold time ≥ 15 min was effective but resulted in wheying-off and textural changes. In phase 2, L. monocytogenes was inoculated either on the slices (ca. 5.0 log10 cfu/g; ON) or in the curds (ca. 7.0 log10 cfu/g; IN) before the cheese block was formed and sliced. The slices were treated at 20°C and 600 MPa at hold times of 3, 10, and 20 min, and then stored at 4 and 10°C for 60 d. For both treatments, L. monocytogenes became less resistant to pressure as hold time increased, with greater percentages of injured cells at 3 and 10 min than at 20 min, at which the lethality of the process increased. For the IN treatment, with hold times of 3 and 10 min, growth of L. monocytogenes increased the first week of storage, but was delayed for 1 wk, with a hold time of 20 min. Longer lag times in growth of L. monocytogenes during storage at 4°C were observed for the ON treatment at hold times of 10 and 20 min, indicating that the IN treatment may have provided a more protective environment with less injury to the cells than the ON treatment.     Four mathematical models were developed and validated for simultaneous growth of mesophilic lactic acid bacteria from added cultures and Listeria monocytogenes, during chilled storage of cottage cheese with fresh- or cultured cream dressing. The mathematical models include the effect of temperature, pH, NaCl, lactic- and sorbic acid and the interaction between these environmental factors. Growth models were developed by combining new and existing cardinal parameter values. Subsequently, the reference growth rate parameters (μref at 25°C) were fitted to a total of 52 growth rates from cottage cheese to improve model performance. The inhibiting effect of mesophilic lactic acid bacteria from added cultures on growth of L. monocytogenes was efficiently modelled using the Jameson approach. The new models appropriately predicted the maximum population density of L. monocytogenes in cottage cheese. The developed models were successfully validated by using 25 growth rates for L. monocytogenes, 17 growth rates for lactic acid bacteria and a total of 26 growth curves for simultaneous growth of L. monocytogenes and lactic acid bacteria in cottage cheese. These data were used in combination with bias- and accuracy factors and with the concept of acceptable simulation zone. Evaluation of predicted growth rates of L. monocytogenes in cottage cheese with fresh- or cultured cream dressing resulted in bias-factors (Bf) of 1.07-1.10 with corresponding accuracy factor (Af) values of 1.11 to 1.22. Lactic acid bacteria from added starter culture were on average predicted to grow 16% faster than observed (Bf of 1.16 and Af of 1.32) and growth of the diacetyl producing aroma culture was on average predicted 9% slower than observed (Bf of 0.91 and Af of 1.17).   7. Kinematic source inversions of teleseismic data based on the QUESO library for uncertainty quantification and prediction

    One fundamental aspect of seismic hazard mitigation is gaining a better understanding of the rupture process. Because direct observation of the relevant parameters and properties is not possible, other means such as kinematic source inversions are used instead. By constraining the spatial and temporal evolution of fault slip during an earthquake, those inversion approaches may enable valuable insights in the physics of the rupture process. However, due to the underdetermined nature of this inversion problem (i.e., inverting a kinematic source model for an extended fault based on seismic data), the provided solutions are generally non-unique. Here we present a statistical (Bayesian) inversion approach based on an open-source library for uncertainty quantification (UQ) called QUESO that was developed at ICES (UT Austin). The approach has advantages with respect to deterministic inversion approaches as it provides not only a single (non-unique) solution but also provides uncertainty bounds with it. Those uncertainty bounds help to qualitatively and quantitatively judge how well constrained an inversion solution is and how much rupture complexity the data reliably resolve. The presented inversion scheme uses only tele-seismically recorded body waves but future developments may lead us towards joint inversion schemes. After giving an insight in the inversion scheme ifself (based on delayed rejection adaptive metropolis, DRAM) we explore the method's resolution potential. For that, we synthetically generate tele-seismic data, add for example different levels of noise and/or change fault plane parameterization and then apply our inversion scheme in the attempt to extract the (known) kinematic rupture model. We conclude with exemplary inverting real tele-seismic data of a recent large earthquake and compare those results with deterministically derived kinematic source models provided by other research groups.

  8. A statistical kinematic source inversion approach based on the QUESO library for uncertainty quantification and prediction

    Seismic, often augmented with geodetic data, are frequently used to invert for the spatio-temporal evolution of slip along a rupture plane. The resulting images of the slip evolution for a single event, inferred by different research teams, often vary distinctly, depending on the adopted inversion approach and rupture model parameterization. This observation raises the question, which of the provided kinematic source inversion solutions is most reliable and most robust, and — more generally — how accurate are fault parameterization and solution predictions? These issues are not included in "standard" source inversion approaches. Here, we present a statistical inversion approach to constrain kinematic rupture parameters from teleseismic body waves. The approach is based a) on a forward-modeling scheme that computes synthetic (body-)waves for a given kinematic rupture model, and b) on the QUESO (Quantification of Uncertainty for Estimation, Simulation, and Optimization) library that uses MCMC algorithms and Bayes theorem for sample selection. We present Bayesian inversions for rupture parameters in synthetic earthquakes (i.e. for which the exact rupture history is known) in an attempt to identify the cross-over at which further model discretization (spatial and temporal resolution of the parameter space) is no longer attributed to a decreasing misfit. Identification of this cross-over is of importance as it reveals the resolution power of the studied data set (i.e. teleseismic body waves), enabling one to constrain kinematic earthquake rupture histories of real earthquakes at a resolution that is supported by data. In addition, the Bayesian approach allows for mapping complete posterior probability density functions of the desired kinematic source parameters, thus enabling us to rigorously assess the uncertainties in earthquake source inversions.

  9. Inhibitory effect of combinations of caprylic acid and nisin on Listeria monocytogenes in queso fresco.

    Queso fresco (QF), a fresh Hispanic cheese has been linked to outbreaks and recalls caused by Listeria contamination. The use antimicrobial treatments may be a potential solution. The goal of this research was to test the addition of nisin (N), caprylic acid (CA) and trans-cinnamaldehyde (CN) as anti-listerial ingredients in QF. QF batches were inoculated with approx. 10(4) CFU/g of 5- or 6-strain mixtures of Listeria monocytogenes and treated with antimicrobials. Samples were stored at 4 °C for three weeks and Listeria counts were determined by plating on PALCAM agar. The impact on the QF's natural indicator microorganisms was also assessed during refrigerated storage. All N and CA combinations (≥0.4 g/kg each) were effective against L. monocytogenes and reduced the final counts by at least 3 log CFU/g after 20 days of storage compared to controls. The levels of most strain mixtures were reduced immediately after treatment and their numbers remained below 10(3) CFU/g during storage. CN (1.2 g/kg) was bacteriostatic against L. monocytogenes, but it did not reduce initial counts. The addition of CN to the combination of N and CA did not enhance their antimicrobial effect. Results indicated that combinations of N and CA could control L. monocytogenes in QF with little impact on the natural flora of the cheese, providing a solution to control post processing L. monocytogenes contamination of QF.   10. The Cottage Lake Aeromagnetic Lineament: A Possible Onshore Extension of the Southern Whidbey Island Fault, Washington

    The northwest-striking southern Whidbey Island fault zone (SWIF) was mapped previously using borehole data and potential-field anomalies on Whidbey Island and marine seismic surveys beneath surrounding waterways. Abrupt subsidence at a coastal marsh on south-central Whidbey Island suggests that the SWIF experienced a MW 6.5 to 7.0 earthquake about 3000 years ago. Southeast of Whidbey Island, a hypothesized southeastward projection of the SWIF would make landfall between the cities of Seattle and Everett. As part of systematic, ongoing studies by the U.S. Geological Survey, University of Washington, and other earth science organizations to evaluate potentially active faults and other earth hazards throughout the Puget Lowland, we test this hypothesis using aeromagnetic, lidar, and borehole data. Linear, northwest-striking magnetic anomalies traversing the mainland region project southeastward toward the communities of Woodinville and Maltby, Washington. All of these magnetic anomalies are low in amplitude and best illuminated in residual magnetic fields. The most prominent of the residual magnetic anomalies extends at least 16 km, lies approximately on strike with the SWIF on Whidbey Island, and passes near Crystal and Cottage Lakes, about 27 km southeast of downtown Everett. In places, this magnetic anomaly is associated with topographic lineaments, but spectral analysis indicates that the source of the anomaly extends to depths greater than 2 km and cannot be explained entirely by topographic effects.     Kluyveromyces fragilis was more suitable than Candida pseudotropicalis or K. lactis for production of EtOH from whey. Direct-acid-set cottage cheese whey and the supernatant fluid resulting from heat treatment of the whey at 95 degrees for 20 min showed similar rates of fermentation when inoculated with K. fragilis. Inoculation rates of 10, 12 and 14 mL of active K. fragilis culture/100 mL of media were not different in rate of EtOH production. Samples incubated with K. fragilis at 35, 37, 40 and 42 degrees showed more rapid reduction in specific gravity than samples incubated at room temperature or 30 degrees. Lactose conversion in whey was 83% complete and in whey supernatant fluid, 77%.

    The Interstate 5 highway corridor, stretching from Mexico to Canada, is not only the economic artery of the Pacific Northwest, but is also home to the majority of Oregonians and Washingtonians. Accordingly, most regional utility and transportation systems, such as railroads and electrical transmission lines, have major components in the I-5 corridor. The section of I-5 from Cottage Grove, Oregon, to Blaine, Washington, is rapidly urbanizing, with population growth and economic development centered around the cities of Eugene, Salem, Portland, Olympia, Tacoma, Seattle, Everett, and Bellingham. For the purposes of this map, we refer to this area as the I-5 Urban Corridor. This publicaton consists of two large sheets: A map and a text-and-figures poster.

    Health service delivery in the Niger Delta region of Nigeria has suffered many setbacks. Community participation may help break the barriers limiting access to health services, especially those associated with family planning and reproductive health services. This is a two-year review of family planning and reproductive health services records offered by the Obio Cottage Hospital from the onset of the Community Insurance Scheme (2010-12). Since the inception of the Community Insurance Scheme, there has been an increase in the uptake of family planning methods of more than 50%; 1,274 women in 2011 vs 3,140 in 2012. An increase in number of women seeking reproductive health services was also observed. The Community Health Insurance Scheme (CHIS) at the Obio Cottage Hospital provides evidence for expansion, as seen in the improvement in patronage for family planning and reproductive health services.     Consumers search for food with functional characteristics beyond its nutritional properties. Thus, the concept of functional food has become a hot topic, allowing us to obtain additional health benefits, including disease prevention. In this context, plants are recognized as sources of a wide range of bioactives, including phenolic compounds. Herein, rosemary aqueous extract was used as a functional ingredient for cottage cheese, after proving that it possesses both higher content of phenolic compounds and antioxidant activity, comparatively with the corresponding hydroethanolic extract. However, a decrease of bioactivity was observed for the cheese samples enriched with the extracts in free form after seven days under storage. Therefore, in order to preserve the antioxidant activity, the rosemary aqueous extract was efficiently microencapsulated by using an atomization/coagulation technique. Overall, the introduction of both free and microencapsulated extracts provided bioactivity that was better preserved with microencapsulated extracts without changing the nutritional value of cottage cheese.   15. Stochastic modelling of Listeria monocytogenes single cell growth in cottage cheese with mesophilic lactic acid bacteria from aroma producing cultures.

    A stochastic model was developed for simultaneous growth of low numbers of Listeria monocytogenes and populations of lactic acid bacteria from the aroma producing cultures applied in cottage cheese. During more than two years, different batches of cottage cheese with aroma culture were analysed for pH, lactic acid concentration and initial concentration of lactic acid bacteria. These data and bootstrap sampling were used to represent product variability in the stochastic model. Lag time data were estimated from observed growth data (lactic acid bacteria) and from literature on L. monocytogenes single cells. These lag time data were expressed as relative lag times and included in growth models. A stochastic model was developed from an existing deterministic growth model including the effect of five environmental factors and inter-bacterial interaction [Østergaard, N.B, Eklöw, A and Dalgaard, P. 2014. Modelling the effect of lactic acid bacteria from starter- and aroma culture on growth of Listeria monocytogenes in cottage cheese. International Journal of Food Microbiology. 188, 15-25]. Growth of L. monocytogenes single cells, using lag time distributions corresponding to three different stress levels, was simulated. The simulated growth was subsequently compared to growth of low concentrations (0.4-1.0 CFU/g) of L. monocytogenes in cottage cheese, exposed to similar stresses, and in general a good agreement was observed. In addition, growth simulations were performed using population relative lag time distributions for L. monocytogenes as reported in literature. Comparably good predictions were obtained as for the simulations performed using lag time data for individual cells of L. monocytogenes. Therefore, when lag time data for individual cells are not available, it was suggested that relative lag time distributions for L. monocytogenes can be used as a qualified default assumption when simulating growth of low concentrations of L. monocytogenes.     Queso Fresco (QF), a popular high-moisture, high-pH Hispanic-style cheese sold in the United States, underwent high-pressure processing (HPP), which has the potential to improve the safety of cheese, to determine the effects of this process on quality traits of the cheese. Starter-free, rennet-set QF (manufactured from pasteurized, homogenized milk, milled before hooping, and not pressed) was cut into 4.5- × 4.5- × 15-cm blocks and double vacuum packaged. Phase 1 of the research examined the effects of hydrostatic HPP on the quality traits of fresh QF that had been warmed to a core temperature of 20 or 40 °C; processed at 200, 400, or 600 MPa for 5, 10, or 20 min; and stored at 4 °C for 6 to 8d. Phase 2 examined the long-term effects of HPP on quality traits when QF was treated at 600 MPa for 3 or 10 min, and stored at 4 or 10 °C for up to 12 wk. Warming the QF to 40 °C before packaging and exposure to high pressure resulted in loss of free whey from the cheese into the package, lower moisture content, and harder cheese. In phase 2, the control QF, regardless of aging temperature, was significantly softer than HPP cheeses over the 12 wk of storage. Hardness, fracture stress, and fracture rigidity increased with length of exposure time and storage temperature, with minor changes in the other properties. Queso Fresco remained a bright white, weak-bodied cheese that crumbled and did not melt upon heating. Although high pressures or long processing times may be required for the elimination of pathogens, cheese producers must be aware that HPP altered the rheological properties of QF and caused wheying-off in cheeses not pressed before packaging.   17. The Cottage Lake Lineament, Washington: Onshore Extension of the Southern Whidbey Island Fault?

    The northwest-striking southern Whidbey Island fault zone (SWIF) is reasonably well expressed by borehole data, marine seismic surveys, and potential-field anomalies on Whidbey Island and beneath surrounding waterways. Johnson et al. (1996) described evidence for Quaternary movement on the SWIF, suggested the fault zone is capable of a M 7 earthquake, and projected three fault strands onto the mainland between the cities of Seattle and Everett. Evidence for this onshore projection is scant, however, and the exact location of the SWIF in this populated region is unknown. Four linear, northwest-striking magnetic anomalies on the mainland may help address this issue. All of the anomalies are low in amplitude and best illuminated in residual magnetic fields. The most prominent of the magnetic anomalies extends at least 15 km, is on strike with the SWIF on Whidbey Island, and passes near Cottage Lake, about 15 km south of downtown Everett. The magnetic anomaly is associated with linear topography along its entire length, but spectral analysis indicates that the source of the anomaly lies principally beneath the topographic surface and extends to depths greater than 2 km. The anomalies are likely created by northwest-trending, faulted and folded Tertiary volcanic and sedimentary rocks of the Cascade foothills, which rise from beneath the Quaternary lowland fill to the southeast of the SWIF. High-resolution Lidar topography provided by King County shows subtle scarps cutting the latest Pleistocene glaciated surface at two locations along the magnetic anomaly; scarps are parallel to the anomaly trend. In the field, one scarp has 2 to 3 m of north-side-up offset; paleoseismic trench excavations are planned for Fall 2003 to determine their nature and history. Preliminary examination of boreholes, recently acquired as part of an ongoing sewer tunnel project, show anomalous stratigraphic and structural disturbances in the area of the magnetic anomalies.     Queso fresco (QF) is a handmade cheese consumed and produced in Latin America. In Mexico, QF production is associated with a microbiological risk. The aim of the study was to determine the incidence and characterization of Listeria monocytogenes, Salmonella spp., and Shiga toxin-producing Escherichia coli (STEC) in QF from retail markets of the north-western State of Sinaloa, Mexico, and to assess the effect of physicochemical parameters on Listeria presence. A total of 75 QF samples were obtained. L. monocytogenes, E. coli, and coliforms were detected in 9.3, 94, and 100%, respectively. Salmonella was not detected. STEC isolates showed virulence genes. Microbial loads were above the maximum values recommended by the Official Mexican Standards. Physicochemical parameters such as water activity (aw), moisture content, pH, and salinity played a role in Listeria prevalence in QF. Rigorous control in QF made in Culiacan, Mexico is needed to reduce the risk of foodborne pathogens. PMID:24809389

  19. Insights into site formation at Rose Cottage Cave, South Africa, based on the analysis of sediment peels

    Rose Cottage Cave (RCC), in South Africa, has been a key site for explaining the origins of modern human behaviour and movement of early modern humans out of Africa. Nine sediment peels were made previously from the profile sections, preserving original materials that provide a record of cultural and environmental change during the late Pleistocene and Holocene. Here, we present the preliminary results of the study of the RCC sediment peels which aims to investigate site formation processes and the implications for site interpretation. Methods used include micromorphology and Fourier Transform Infrared spectroscopy coupled with detailed observations of the peels. The predominance of geogenic processes is demonstrated by the abundance of silt- and sand-sized quartz grains, which entered the site primarily through a crevice at the back of the cave. RCC lacks rich anthropogenic deposits as noted at other Middle Stone Age sites in southern Africa, but anthropogenic input to the sediment is indicated by the presence of charcoal, burnt bone, lithic fragments, fat-derived char and ashes. Clay coating fragments and chaotic microstructures demonstrate that bioturbation and colluvial reworking homogenised much of the deposit and may explain the absence of preserved bedding and rarity of combustion features. Downward movement of water through the sequence, indicated by clay coatings, is the likely cause for poor bone preservation and near lack of ashes at the site, as well as fluctuations in dose rate that have complicated luminescence dating studies. Evidence for diagenesis at the site is in the form of secondary apatite and gypsum. Sedimentary structures such as channel lag deposits and (silt and sand) laminae observed in peels dating between 60 and 35 ka BP suggest a high-energy sedimentary environment, which experienced flooding events that eroded underlying deposits and deposited large volumes of sediment.     Beta-galactosidase immobolized on a porous silica carrier was used to effect the hydrolysis of lactose in permeate that results from the ultrafiltration of cottage cheese whey. Results obtained from analyzing kinetics of the immobilized enzyme have led to the formulation of a model that can be used to assess catalyst performance when utilizing a specified reactor operating strategy. The model predicts a lifetime of 90 days for the catalyst bed when starting production at 30 degrees and maintaining a constant production rate by raising the operating temperature as a function of time-on-stream. The useful lifetime of the catalyst was not significantly affected by the extent of lactose conversion carried out in the reactor. This model has the potential for use in optimization of reactor operating conditions for industrial applications of the immobilized enzyme.

    Spices and lactic acid bacteria have natural antimicrobial substances and organic compounds having antagonistic activity against microorganisms. The objective of this study was to investigate the role of spices and lactic acid bacteria as antimicrobial agent to extend the shelf life of metata ayib. Antimicrobial activities of spices and lactic acid bacteria (LAB) filtrates were determined by agar well diffusion method against E. coli, S. aureus, S. flexneri and S. peumoniae. Aantimicrobial activity of garlic was found to be the most effective against all the tested pathogens. Inhibition zones of garlic extract against all pathogens was significantly (P ≤ 0.05) greater than the remaining spice extracts. Inhibition zones (12.50 ± 1.00 to 15.50 ± 1.00 mm) of ginger and R. graveolens ethanol extracts against all tested pathogens were significantly (P ≤ 0.05) greater than the remaining solvent extracts. Inhibition zone of O. basilicum ethanol extract against all pathogenic bacteria was significantly (p ≤ 0.05) greater than hexane and acetone extracts. Lactobacillus isolates were shown the highest antimicrobial activity than the other LAB isolates against all pathogens. The synergistic effect of spices together with LAB might be contributed a lot to preserve and extend shelf life of metata ayib. Their antimicrobial activity can reduce the risk of spoilage and pathogenesis. The possible reason of LAB isolates was may be due to production of lactic acid, acetic acid and secondary metabolites like bacteriocins. Aseptic processing of traditional cottage cheese (ayib) is by far needed to minimize risks associated during consumption of metata ayib. PMID:26344979

  2. Effect of the variation of the level of lactose conversion in an immobilized lactase reactor upon operating costs for the production of Baker's yeast from hydrolyzed permeate obtained from the ultrafiltration of cottage cheese whey

    Operating costs for the production of Baker's yeast from hydrolyzed permeate from the ultrafiltration of cottage cheese whey were calculated as a function of the level of lactose conversion in the immobilized lactase reactor. These costs were calculated for the case of 90% conversion of lactose in the reactor and compared to those which result when running the reactor at lower conversions with recycle of unreacted lactose. Total operating costs were estimated by combining individual operating costs for the immobilized enzyme reactor, costs associated with processing a lactose recycle stream, and energy costs associated with cooling the reactor feed stream and sterilizing the hydrolysate stream. It was determined that operating costs are minimized at about 9.9 cents per pound of lactose when the reactor is run at approximately 72% conversion. This represents a savings of 2.4 cents per pound of lactose over the case of a once-through 90% conversion of lactose in the reactor. 8 refs., 4 figs., 9 tabs.

  2. Tobacco Dust Induced Genotoxicity as an Occupational Hazard in Workers of Bidi Making Cottage Industry of Central India

    Context: To explore genotoxicity in bidi rollers occupationally exposed to bidi tobacco dust. Aims: To assess the extent of genotoxicity of tobacco dust to bidi rollers of Jabalpur, Madhya Pradesh, India and cytotoxicity of bidi tobacco extract. Settings and Design: Blood samples from 31 bidi rollers and 30 controls taken after written informed consent were analyzed for chromosome aberrations (CA) and comet assay. Materials and Methods: Genotoxicity was studied by CA in cultured peripheral blood lymphocytes of bidi rollers and the deoxyribonucleic acid (DNA) damage studies were done by comet assay of their blood. The toxicity of bidi tobacco extract to normal human lymphocytes was studied by MMT (3-[4,5-dimethylthiazol-2-yl]-2,5 diphenyl tetrazolium bromide) assay as drop in viability. Statistical Analysis Used: Student's t-test and DMRT. Results: There is a general trend of increase in CA% of both in exposed and control groups with age, but in every group the bidi rollers have a significantly higher CA% than the controls. The CA % is also directly related to exposure. The comet assay findings reveal that the mean comet length and tail length increases with exposure time. The toxicity of bidi tobacco extract (TE) to normal human lymphocytes was tested in vitro by 3-[4,5-dimethylthiazol-2-yl]-2,5 diphenyl tetrazolium bromide (MTT) assay at 2 h of incubation. The trend of drop in viability with increasing concentrations of TE was clearly evident from the data from four donors in spite of their individual differences in viability. Conclusions: The results obtained in this investigation indicate that bidi rollers seem to be facing the occupational hazard of genotoxicity due to handling bidi tobacco and inhalation of tobacco dust. They should be advised to work under well-ventilated conditions. PMID:24748730

    This article is based on an ethnographic study of a cottage for violent offenders in one state's maximum-security training school. Staff members working in the cottage were the institution's front line in its attempts to hold the youth accountable for their crimes while also trying to resocialize and rehabilitate young men who were growing up with few conforming role models. As such, cottage staff members were put in the difficult position of juggling their roles as corrections officers, counselors, and surrogate parents. To effectively do their job, they had to find ways to balance the rhetoric of rehabilitation with the punitive reality of daily life in the institution. This article details the juvenile justice career paths of the staff members in the cottage and provides a sociological analysis of the roles, responsibilities, and interactions of the staff members with each other and with the young men in their care.     The Moscovian plant macroflora at Cottage Grove southeastern Illinois, USA, is a key example of Pennsylvanian (323–299 Million years ago) dryland vegetation. There is currently no palynological data from the same stratigraphic horizons as the plant macrofossils, leaves and other vegetative and reproductive structures, at this locality. Consequently, reconstructions of the standing vegetation at Cottage Grove from these sediments lack the complementary information and a more regional perspective that can be provided by sporomorphs (prepollen, pollen, megaspores and spores). In order to provide this, we have analysed the composition of fossil sporomorph assemblages in two rock samples taken from macrofossil-bearing inter-coal shale at Cottage Grove. Our palynological data differ considerably in composition and in the dominance-diversity profile from the macrofossil vegetation at this locality. Walchian conifers and pteridosperms are common elements in the macroflora, but are absent in the sporomorph assemblages. Reversely, the sporomorph assemblages at Cottage Grove comprise 17 spore taxa (∼16% and ∼63% of the total assemblages) that are known from the lycopsid orders Isoetales, Lepidodendrales and Selaginallales, while Cottage Grove’s macrofloral record fails to capture evidence of a considerable population of coal forest lycopsids. We interpret our results as evidence that the Pennsylvanian dryland glacial landscape at Cottage Grove included fragmented populations of wetland plants living in refugia. PMID:25392752

  8. Flavor and Functional Characteristics of Whey Protein Isolates from Different Whey Sources.

    This study evaluated flavor and functional characteristics of whey protein isolates (WPIs) from Cheddar, Mozzarella, Cottage cheese, and rennet casein whey. WPIs were manufactured in triplicate. Powders were rehydrated and evaluated in duplicate by descriptive sensory analysis. Volatile compounds were extracted by solid-phase microextraction followed by gas chromatography-mass spectrometry. Functional properties were evaluated by measurement of foam stability, heat stability, and protein solubility. WPI from Cheddar and Cottage cheese whey had the highest cardboard flavor, whereas sweet aromatic flavor was highest in Mozzarella WPI, and rennet casein WPI had the lowest overall flavor and aroma. Distinct sour taste and brothy/potato flavor were also noted in WPI from Cottage cheese whey. Consistent with sensory results, aldehyde concentrations were also highest in Cheddar and Cottage cheese WPI. Overrun, yield stress, and foam stability were not different (P > 0.05) among Cheddar, Mozzarella, and rennet casein WPI, but WPI foams from Cottage cheese whey had a lower overrun and air-phase fraction (P < 0.05). Cottage cheese WPI was more heat stable at pH 7 (P < 0.05) than other WPI in 4% protein solutions, and was the only WPI to not gel at 10% protein. Cottage cheese WPI was less soluble at pH 4.6 compared to other WPI (P < 0.05) and also exhibited higher turbidity loss at pH 3 to 7 compared to other WPI (P < 0.05).   9. Use of a miniature laboratory fresh cheese model for investigating antimicrobial activities.

    Hispanic-style fresh cheeses, such as queso fresco, have relatively low salt content, high water activity, and near neutral pH, which predisposes them to growth of Listeria monocytogenes. Biosafety constraints limit the incorporation of L. monocytogenes into cheeses manufactured via traditional methods in challenge studies, so few have focused on in situ testing of novel antimicrobials in fresh cheeses. We have developed a modular, miniaturized laboratory-scale queso fresco model for testing the incorporation of novel antilisterials. We have demonstrated the assessment of the antilisterials nisin and ferulic acid, alone and in combination, at various levels. Our results support the inhibitory effects of ferulic acid in cheese, against both L. monocytogenes and its common surrogate Listeria innocua, and we provide preliminary evaluation of its consumer acceptability.
