  1. Characterization and bake stability of dry fruit fillings in dehydrated chiku (Manilkara zapota L. P. Royen) incorporated biscuits.

    Expanding the range of bakery products in terms of producing supplemented or dietetic products has been an increasingly important trend in contemporary baking. Value added products, especially products rich in fiber and phytochemicals are getting popular. Among the dry fruits used for filling, Figs were rich in ash and protein and Dates were rich in dietary fiber. Gallic acid was the dominant free phenolic acid in Fig whereas chlorogenic acid and procatechuic acid were dominant in Dates in the bound form. Farinograph water absorption, dough development time, maximum pressure (P), and extensibility (L) decreased on increase in the replacement of wheat flour with chiku powder from 0 to 30%. The dry fruit fillings in the pH range of 3.3-3.5 with 75-80°Bx showed better bake stability with respect to spreadability and breaking strength. Biscuits topped with higher °Bx fillings had higher breaking strength values even during storage. Among the gelling agents used, addition of sodium alginate stabilized and further improved the bake stability of the fillings. The chiku incorporated biscuits sandwiched with fruit filling were rich in dietary fiber. Also significant amounts of gallic acid and chlorogenic acid in free and bound form were present in the biscuit. Bakery products can act as a vehicle for supplementation of vitamins, minerals, protein, dietary fiber, and so on, to prevent nutritive deficiencies. Among the bakery products, biscuits are shelf stable and have better consumer acceptability by all age groups. To incorporate fruits which are rich in many bioactive principles, and to add on to variety, fruit sandwiched biscuits with fruit powder in the casing too. Fillings mainly from dry fruits were prepared at varying degree brix and with different gelling agents. Biscuit sheets containing chiku powder in the formulation was topped with the fillings and looked for the bake stability with respect to texture and spreadability.   2. A Trophic Model of a Sandy Barrier Lagoon at Chiku in Southwestern Taiwan

    Using the ECOPATH 3.0 software system, a balanced trophic model of a sandy barrier lagoon with intensive fishery activities at Chiku in tropical Taiwan was constructed. The lagoon model comprised 13 compartments. Trophic levels of the compartments varied from 1·0 for primary producers and detritus to 3·6 for piscivorous fish. Hanging-cultured oysters accounted for 39% of the harvestable fishery biomass and were the most important fishery species. The most prominent group in terms of biomass and energy flow in the lagoon was herbivorous zooplankton. Manipulations of the biomass of herbivorous zooplankton would have a marked impact on most compartments. Both total system throughput and fishery yield per unit area were high when compared to other reported marine ecosystems. This appears mainly due to high planktonic primary production, which is probably promoted by enriched river discharges draining mangroves and aquaculture ponds. Consequently, more than half of the total system throughput originates from primary producers in the lagoon. Although half of the primary production was not immediately used by upper trophic levels and flowed into the detrital pool, most of the detritus was directly consumed, passed up the food web and was exported to the fishery. Thus only a small proportion of energy was recycled through detritus pathways. This mechanism produces short pathways with high trophic efficiencies at higher trophic levels. The high fishery yield in the lagoon is due to high primary production and short pathways. This is the first model of a tropical sandy barrier lagoon with intensive fishery activities and thus may serve as a basis for future comparisons and ecosystem management.

    A new species of limestone cave-adapted gecko of the Cyrtodactylus pulchellus complex, C. hidupselamanya sp. nov., is described from an isolated karst formation at Felda Chiku 7, Kelantan, Peninsular Malaysia. This formation is scheduled to be completely quarried for its mineral content. From what we know about the life history of C. hidupselamanya sp. nov., this will result in its extinction. A new limestone forest-adapted species, C. lenggongensis sp. nov., from the Lenggong Valley, Perak was previously considered to be conspecific with C. bintangrendah but a re-evaluation of morphological, color pattern, molecular, and habitat preference indicates that it too is a unique lineage worthy of specific recognition. Fortunately C. lenggongensis sp. nov. is not facing extinction because its habitat is protected by the UNESCO Archaeological Heritage of the Lenggong Valley due to the archaeological significance of that region. Both new species can be distinguished from all other species of Cyrtodactylus based on molecular evidence from the mitochondrial gene ND2 and its flanking tRNAs as well as having unique combinations of morphological and color pattern characteristics. Using a time-calibrated BEAST analysis we inferred that the evolution of a limestone habitat preference and its apparently attendant morphological and color pattern adaptations evolved independently at least four times in the C. pulchellus complex between 26.1 and 0.78 mya.
