    Vino Santo is a sweet wine produced from late harvesting and pressing of Nosiola grapes in a small, well-defined geographical area in the Italian Alps. We used metagenomics to characterize the dynamics of microbial communities in the products of three wineries, resulting from spontaneous fermentation with almost the same timing and procedure. Comparing fermentation dynamics and grape microbial composition, we show a rapid increase in a small number of wine yeast species, with a parallel decrease in complexity. Despite the application of similar protocols, slight changes in the procedures led to significant differences in the microbiota in the three cases of fermentation: (i) fungal content of the must varied significantly in the different wineries, (ii) Pichia membranifaciens persisted in only one of the wineries, (iii) one fermentation was characterized by the balanced presence of Saccharomyces cerevisiae and Hanseniaspora osmophila during the later phases. We suggest the existence of a highly winery-specific 'microbial-terroir' contributing significantly to the final product rather than a regional 'terroir'. Analysis of changes in abundance during fermentation showed evident correlations between different species, suggesting that fermentation is the result of a continuum of interaction between different species and physical-chemical parameters.     The applicability of a light backscatter sensor with a large field of view was tested for on-line monitoring of coagulation and syneresis in a goat cheese (Murcia al Vino) manufactured under industrial conditions. Cheesemaking was carried out concurrently in a 12-L pilot vat and a 10,000-L industrial vat following the normal cheesemaking protocol. Cheese moisture, whey fat content, hardness, springiness, and adhesiveness were measured during syneresis. The results obtained show that cutting time is best predicted by considering the coagulation ratio at the inflection point and the percentage increase in the ratio during coagulation, with no need for the first derivative. The large field of view reflectance ratio provided good results for the prediction of moisture content, yield, hardness, springiness, and adhesiveness of the final cheese.

    Principal and subsidiary building structure characteristics and their distribution have been inventoried in Icod, Tenerife (Canary Islands) and used to evaluate the vulnerability of individual buildings to three volcanic hazards: tephra fallout, volcanogenic earthquakes and pyroclastic flows. The procedures described in this paper represent a methodological framework for a comprehensive survey of all the buildings at risk in the area around the Teide volcano in Tenerife. Such a methodology would need to be implemented for the completion of a comprehensive risk assessment for the populations under threat of explosive eruptions in this area. The information presented in the paper is a sample of the necessary data required for the impact estimation and risk assessment exercises that would need to be carried out by emergency managers, local authorities and those responsible for recovery and repair in the event of a volcanic eruption. The data shows there are micro variations in building stock characteristics that would influence the likely impact of an eruption in the area. As an example of the use of this methodology for vulnerability assessment, we have applied a deterministic simulation model of a volcanic eruption from Teide volcano and its associated ash fallout which, when combined with the vulnerability data collected, allows us to obtain the vulnerability map of the studied area. This map is obtained by performing spatial analysis with a Geographical Information System (GIS). This vulnerability analysis is included in the framework of an automatic information system specifically developed for hazard assessment and risk management on Tenerife, but which can be also applied to other volcanic areas. The work presented is part of the EU-funded EXPLORIS project (Explosive Eruption Risk and Decision Support for EU Populations Threatened by Volcanoes, EVR1-2001-00047).

    Introducción: la carcinogénesis puede ser iniciada y promovida por el daño oxidativo al ADN. Los compuestos de cromo (Cr) [VI] generan estrés oxidativo (EOx) y son reconocidos como cancerígenos en humanos. En este sentido, se plantea que bebidas que presentan un alto potencial antioxidante, como el vino tinto, pudieran tener efectos protectores o moduladores del daño oxidativo al ADN. Objetivo: estudiar los efectos de la administración in vivo de vino tinto sin diluir, diluido (75%) y sin alcohol, sobre el daño genotóxico inducido por metales cancerígenos (Cr [VI]), mediante la evaluación de micronúcleos (MN) en eritrocitos policromáticos (EPC) de ratones (CD-1). Material y método: se conformaron aleatoriamente los siguientes grupos: (i) testigo, (ii) vino tinto sin diluir, diluido o sin alcohol (libre acceso), (iii) CrO3 (20 mg/kg por vía intraperitoneal) y (iv) vino tinto-CrO3. Las evaluaciones se realizaron en muestras de sangre obtenidas de la vena caudal, en las que se identificaron los MN en EPC antes, durante y después de los tratamientos. Resultados y discusión: el vino tinto (diluido y sin alcohol) fue capaz de disminuir los promedios de MN inducidos por el CrO3, lo que muestra su capacidad para modular in vivo el daño oxidativo al ADN causado por cancerígenos inductores de EOx. La administración únicamente de vino tinto sin diluir presentó efectos tóxicos. Conclusiones: nuestros resultados generan expectativas sobre el empleo de sustancias como el vino tinto en la protección o modulación del daño genotóxico, lo que podría conducir a su aplicación en los procesos de carcinogénesis y mutagénesis.

    Introducción: El cáncer se ha convertido en las últimas décadas en una de las principales causas de muerte en todo el mundo. La búsqueda para la prevención efectiva, se ha convertido en una prioridad para la ciencia básica y clínica. Los polifenoles del vino se han propuesto como terapia alternativa para inducir o mantener la remisión del cáncer. Objetivo: Revisar las evidencias científicas publicadas sobre el cáncer y la eficacia de la terapia con suplementos dietarios (especialmente polifenoles del vino). Material y métodos: Se ha realizado una extensa búsqueda de publicaciones científicas en las principales bases de datos electrónicas especializadas: NBCI, Elsevier, Scielo, Scirus y Science Direct. Resultados y Discusión: Se han reunido resultados de trabajos realizados in vitro y en animales de laboratorio en los que se pone de manifiesto el efecto de los polifenoles del vino (especialmente, el resveratrol) en el control de la apoptosis celular de diferentes tipos de cánceres mediante un aumento de las especies reactivas de oxígeno, así como también el retardo en el crecimiento de las mismas. El consumo de vino regular y moderado (uno o dos vasos al día) se asocia con la disminución de la incidencia de enfermedad cardiovascular, la hipertensión, la diabetes, y ciertos tipos de cáncer, como el de colon, el de mama, el de pulmón, o de próstata. Sin embargo, las evidencias científicas a cerca de los efectos protectores del resveratrol son insuficientes. Conclusiones:Los resultados publicados hasta la fecha referentes al rol de los polifenoles del vino en la prevención del cáncer contribuyen al mejor conocimiento y entendimiento de las modificaciones moleculares del cáncer. Los polifenoles del vino ha demostrado un papel significativo como antioxidante y prooxidante en el cáncer, aunque son necesarias más investigaciones en humanos.

    Introducción: en busca de una mejor calidad de vida, crece el número de estudios sobre alimentos funcionales y la prevención de enfermedades. Destacan el jugo de uva roja (JU) y el vino tinto (VT), que son ricos en polifenoles, y tienen efecto antioxidante y antiinflamatorio. Objetivo: evaluar el efecto de la ingesta de JU, VT y solución de resveratrol (SR) sobre la presión arterial y la deposición de grasa hepática en ratas alimentadas con una dieta rica en grasas. Métodos: durante 60 días, 50 adultos de Rattus norvegicus Wistar Albino fueron divididos en grupos: control (GC) - dieta equilibrada y hiperlipídica (GH), vino tinto (GV), jugo de uva (JV) y resveratrol (GR) - dieta rica en grasas. El alimento y el agua se ofrecieron ad libttum a todos los grupos. JU, VT y SR se ofrecen diariamente a la GS, GV y GR, respectivamente. Se midió la presión arterial en la cola mediante manguito inflable. Los animales fueron anestesiados y sacrificados y se les extirpó el hígado, que fue pesado y del cual se extrajo la grasa con el extractor Soxhlet. Resultados: no hubo diferencia en la ganancia de peso, consumo de alimento, peso del hígado y presión arterial diastólica entre los grupos.     Although the positive role of non-Saccharomyces yeasts on the overall quality of wine is encouraging research into their oenological potential, current knowledge on the topic is still far from satisfactory. This work analyzes the contribution of starter cultures of Torulaspora delbrueckii, inoculated sequentially with Saccharomyces cerevisiae (multi-starter fermentation), on the fermentation and aromas of two different white style wines, i.e., dry and sweet wines. Chemical analysis of Soave and Chardonnay wines (dry wines) showed that multi-starter fermentation greatly affected the content of several important volatile compounds, including 2-phenylethanol, isoamyl acetate, fatty acid esters, C4-C10 fatty acids and vinylphenols. Moreover, strain-specific contributions have been shown by testing two different T. delbrueckii strains. Evidence of the positive impact of T. delbrueckii activity on wine quality was also demonstrated in Vino Santo, a sweet wine. Due to its low production of acetic acid, this non-Saccharomyces yeast is recommended for the fermentation of high sugar grapes. T. delbrueckii also influenced the content of different variety of chemical groups, including lactones. From a sensory perspective, all wines produced by multi-starter fermentation have greater aromatic intensity and complexity than wines resulting from a monoculture fermentation. These results emphasize the potential of employing T. delbrueckii, in association with S. cerevisiae, for the production of white wines of different styles with improved and enhanced flavour.

    The aim of this study was to evaluate the effect of feeding goats with distilled and non-distilled thyme leaves (Thymus zygis subsp. gracilis) on the physicochemical composition and technological properties of pasteurised goat milk, and on the physicochemical composition, phenolic content, oxidative stability, microbiology, sensory and texture profile of Murcia al Vino goat cheese. One group of goats was fed the basal diet (control), the second and third groups were fed with different levels of distilled (10 and 20%) or non-distilled (3·75 and 7·5%) thyme leaves. Goat milk physicochemical composition was significantly affected by the substitution of 7·5% of basal goat diet with non-distilled thyme leaves (increase in fat, protein, dry matter and PUFA content), while goat milk clotting time was increased significantly by the introduction of 20% distilled thyme leaves, which reduces its technological suitability. Microbiology, sensory and texture profiles were not affected by the introduction of distilled thyme leaves. The introduction of distilled and non-distilled thyme leaves as an alternative feed to diet can lead to an inhibition of lipids oxidation. The introduction of distilled and non-distilled thyme leaves into goat's diet can be successfully adopted as a strategy to reduce feeding costs and to take advantage of the waste from the production of essential oils, minimising waste removing costs and the environmental impact.

    Historically, states of intoxication--like dreams and madness--are seen in either one of two opposed ways. The intoxicated are either "possessed" or "under the influence" of an external agency, or revealing hidden feelings or truths (in vino veritas). Along the same lines, artists who worked during LSD, mescalin or psilocybin intoxication often refer to feelings of either being "possessed" or "liberated," a difference that can be explained partly by their expectations and partly by their evaluations, which both tend to conform to the cultural dichotomy in interpreting the irrational. Both interpretations, however, tend to obscure not only the other, but also-it is posited-the paradoxical nature of the drug experience itself. Analysis of a protocol shows that intoxication might comprise feelings of "possession" as well as "liberation" almost simultaneously, and mediumistic and some psychedelic art shows stylistic traits that can be seen as the visual expressions of both these feelings. It seems that the "demoniacal" and "psychedelic" mode come together in experiential reality, only to be divided in the cultural sphere.

    Alcohol's function as a regulator of emotions has long been denoted in figures of speech, most famously 'in vino, veritas' (in wine, truth). In contrast, we ask whether an individual's self-reported alcohol consumption and related attitudes can be correlated with the words they use to write about alcohol. Participants completed an open-ended essay as part of a survey on alcohol attitudes and behaviors. We used a computerized technique, the Meaning Extraction Method, to summarize the responses into thematic tropes, and correlated these with quantitative measurements of demographics, attitudes and behaviors. Participants were recruited using a random population postal survey in the UK (n=1001). Principal components analysis identified regular co-occurring words, to locate themes in the responses. Seven themes were identified that corresponded to both negative and positive aspects of alcohol consumption ranging from concern for the influence of alcohol on others (e.g., children and family) to participants' own enjoyment of alcohol (e.g., social drinking). Small but significant correlations suggested a relationship between the essay responses and individual consumption patterns and attitudes.

    Pathogenic strains of Acanthamoeba are causative agents of a sight-threatening infection of the cornea known as Acanthamoeba keratitis, which is often associated with the misuse of contact lenses. However, there is still a question remaining to be answered, which is whether these micro-organisms are present on the ocular surface of healthy individuals. Therefore, the aim of this study was to determine the presence of Acanthamoeba on the ocular surface in healthy patients and also in those with other ocular surface infections. Sterile Schirmer test strips were used to collect samples from a group of patients who attended an ophthalmology consultation at the Hospital del Norte, Icod de los Vinos, Tenerife, Canary Islands. Most of the patients (46 individuals, 79.31  %) presented ocular surface pathologies such as blepharitis or conjunctivitis; the rest did not present any pathology. None of the patients included in the study wore contact lenses. The collected samples were cultured in 2  % non-nutrient agar plates and positive plates were then cultured in axenic conditions for further analyses. Molecular analysis classified all isolated strains as belonging to Acanthamoeba genotype tbl4, and osmotolerance and thermotolerance assays revealed that all strains were potentially pathogenic. Furthermore, all strains were assayed for sensitivity against voriconazole and chlorhexidine. Assays showed that both drugs were active against the tested strains. In conclusion, the Schirmer strip test is proposed as an effective tool for the detection of Acanthamoeba on the ocular surface.

La malformación del fenómeno de milking no es identificada en la mayoría de las ocasiones, pero puede tener grandes repercusiones. El propósito es ejemplificar un caso de fenómeno de milking con consecuencias de incapacidad permanente y consecuencias laborales. CASO CLÍNICO: hombre de 44 años de edad que laboralmente se ocupaba como peón albañil y peón agrícola. Como antecedentes refirió amigdalectomía y artrosis, tabaquismo de 10 cigarrillos diarios, dos o tres tazas de café diarias y dos o tres copas de vino en fin de semana. Mediante electrocardiograma se identificó ritmo sinusal y bloqueo incompleto de la rama derecha del fascículo atrioventricular. Su frecuencia cardiaca fue de 90 latidos por minuto. Para la prueba de esfuerzo se utilizó el protocolo de Bruce, que se detuvo en el primer estadio debido a crisis hipertensiva y fibrilación auricular paroxística. El cateterismo mostró tronco común izquierdo, arteria coronaria cincunfleja y arteria coronaria derecha sin lesiones, arteria descendente anterior sin lesiones con trayecto intramiocárdico y compresión sistólica en segmento medio, con lo cual se integró el diagnóstico de milking coronario. El paciente requirió incapacidad permanente total con limitación para actividades que necesitaran esfuerzo moderado.

    Introducción: El entorno educativo y laboral ha adquirido protagonismo como ámbito prometedor para llevar a cabo intervenciones nutricionales en población adulta. Objetivos: El objetivo de este trabajo es evaluar los hábitos alimentarios y actitudes hacia el cambio en trabajadores y alumnos universitarios con distinto perfil académico. Métodos: Estudio epidemiológico descriptivo de tipo transversal en población universitaria española de 1.429 sujetos. Se analizaron los hábitos alimentarios y las actitudes hacia el cambio de hábitos. Resultados: La edad media de los trabajadores fue de 37 años y en los estudiantes de 23 años. En ambos grupos el fraccionamiento de la ingesta más frecuente fue de cuatro tomas al día. En los alumnos se observó menor frecuencia de consumo de verdura, vino, pescado y frutos secos y mayor de bebidas carbonatadas, repostería comercial, fast-food y carnes rojas. Por otro lado, en general los hábitos alimentarios de los estudiantes de ciencias fueron más saludables que los de letras. Aunque no se observaron diferencias significativas en las actitudes hacia el cambio entre estudiantes y trabajadores, el 32% de los empleados y el 39% de los estudiantes afirmaron estar planteándose seriamente cambiar sus costumbres. Conclusiones: El patrón alimentario fue más saludable entre los trabajadores que entre los alumnos, especialmente en aquellos que cursan grados de letras, que constituyen el grupo más vulnerable desde el punto de vista nutricional. Además, aproximadamente un tercio de los trabajadores y alumnos se planteaba modificar sus hábitos.

    Introducción: los adultos mayores no institucionalizados son un colectivo que suele presentar alto riesgo de malnutrición. Detectar problemas nutricionales mediante indicadores de la calidad global de la dieta, es un reto para los profesionales de la salud, de utilidad para la planificación de políticas nutricionales. Objetivo: determinar la calidad global de la dieta de la población española mayor de 80 años no institucionalizada, para promover y fomentar la calidad de vida del anciano. Metodología: se seleccionaron las personas mayores de 80 años del Estudio Longitudinal Envejecer en España 2011-2013 (n = 159), residentes en diversas zonas españolas. Para valorar la calidad de la dieta se utilizó el índice de alimentación saludable (IAS), la frecuencia de consumo de alimentos y el grado de adhesión al patrón de dieta Mediterránea (ADM). Resultados: la población presentó valores de IAS cercanos a los correspondientes a una dieta saludable. Un porcentaje significativo necesitaba cambios en su alimentación, siendo los mayores de 90 años los que requirieron una mayor intervención dietética. La mayoría de la población cumplió las recomendaciones de la dieta mediterránea, aunque se observó bajo consumo de verduras, hortalizas, frutos secos y vino; y elevado consumo de embutidos. Conclusiones: la dieta consumida habitualmente por los españoles mayores de 80 años no institucionalizados presenta desajustes nutricionales que podrían corregirse realizando pequeños cambios en su patrón dietético. Determinar la calidad global de la dieta permite la planificación de estrategias de intervención para promover cambios alimentarios saludables y emprender acciones orientadas al mantenimiento de una salud óptima en el binomio envejecimiento-nutrición.

    Objetivo: La etapa universitaria conlleva una serie de cambios emocionales, fisiológicos y ambientales que van a determinar unas costumbres y hábitos de riesgoque en muchos casos serán mantenidos a lo largo de la vida y repercutirán en su estado de salud. El objetivo del presente estudio es analizar el estilo de vida (consumo de alcohol, tabaco y niveles de actividad física) de mujeres estudiantes de la Universidad de Granada. Metodología: Se trata de un estudio transversal/descriptivo y analítico en el que han participado 55 estudiantes de dos grupos de edad (18-24 y 25-31años). Se aplicó un cuestionario de estilo de vida evaluando el tipo de alcohol y frecuencia de consumo, cantidad de cigarrillos consumidos diariamente y niveles de actividad física (sedentaria, ligera, moderada e intensa). Resultados: El consumo de alcohol es mayor en el grupo de mayor edad, y con preferencia beben cerveza/vino, sin embargo el grupo más joven muestra un patrón de consumo centrado en los fines de semana siendo las bebidas destiladas las consumidas preferentemente. Una tercera parte de la población fuma con un incremento en el número de cigarros conforme aumenta la edad. Existe una correlación positiva entre tabaco y alcohol. El 88.9% del grupo de menor edad y el 52.7% del grupo de mayor edad tienen una actividad física sedentaria-ligera. Conclusión: Se sugiere la necesidad de concienciar a la población femenina universitaria sobre los beneficios del abandono del consumo de alcohol y tabaco y la práctica regular de ejercicio físico. Además, sería aconsejable desarrollar protocolos de intervención educativa en el ámbito universitario potenciando los hábitos de vida saludables.

    Introducción: La alimentación es un importante factor vinculado a la ocurrencia del cáncer. Su abordaje en términos de patrones alimentarios es de creciente interés en epidemiología nutricional, no obstante ha sido pocas veces empleado en Latinoamérica. Objetivos: Identificar patrones alimentarios en la población adulta de Córdoba (Argentina) y estimar sus efectos sobre el riesgo de ocurrencia de cáncer colorrectal (CCR), cáncer de mama (CM), cáncer de próstata (CP) y urotelial (CU). Métodos: Se condujeron estudios caso-control, 2006-2012, correspondientes a CCR, CM, CP y CU. Empleando un análisis factorial de componentes principales se identificaron patrones alimentarios. Se estimaron ORs mediante regresión logística multinivel. Resultados: Se identificaron patrones característicos en la población general, y en hombres y mujeres independientemente. En población total, los patrones Cono Sur y Bebidas Azucaradas evidenciaron un efecto promotor para CCR y CU, y el Patrón Prudente mostró efecto protector. En mujeres, el CM se asoció de manera directa con los patrones Cono Sur Femenino, Rural y Amiláceo, e inversa con el Patrón Prudente. En hombres, los Patrones Cono Sur Masculino, Bebidas Azucaradas y Típico Mesurado mostraron un efecto promotor para CP. Conclusión: Resulta necesario promover una ingesta habitual de vegetales, frutas y lácteos (éstos últimos de manera moderada en hombres), y disminuir el consumo de carnes rojas (fundamentalmente grasas), carnes procesadas, vegetales amiláceos, vino y bebidas azucaradas, a fin de prevenir la ocurrencia de cáncer. En hombres se sugiere moderar la ingesta de huevos, y en mujeres la de granos refinados, productos de pastelería, aceites y mayonesa.

    INTRODUCCIÓN: La cirugía de la diabetes en pacientes obesos y delgados parece ser una alternativa superior al tratamiento médico actual. El bypass gástrico es un tratamiento alternativo al tratamiento médico actual. Sin embargo, todavía hay dudas sobre si la diabetes puede reaparecer si hay aumento de peso o si se mantienen los efectos en el tiempo. Otras preguntas se refieren al tipo de cirugía para hacer la longitud del remanente gástrico o el tamaño del reservorio para la resolución de la Diabetes Mellitus. Presentación del caso: Paciente masculino de 69 años de edad, vino a nosotros con el fin de realizar el bypass gástrico de una anastomosis a medida (BAGUA) para tratar su diabetes mellitus tipo 2 y el síndrome metabólico. Tiene antecedentes de úlcera péptica tratado con gastrectomía subtotal y reconstrucción tipo Billroth II hace 49 años. Actualmente él no es obeso y desarrolló diabetes 31 años después de la cirugía. DISCUSIÓN: A nivel mundial no hay reportes de pacientes con IMC normal que después de realizar un bypass gástrico desarrollaron diabetes mellitus. Hay casos en que los pacientes diabéticos obesos después del bypass gástrico mejoran o remite la DMT2, pero reaparece debido a la pérdida de peso insuficiente o reganancia de él. El paciente con un bypass gástrico tipo Billroth II, no debió desarrollar diabetes. Él tiene peso normal y no ha aumentado de peso que podría estar relacionado con el desarrollo de diabetes. CONCLUSIÓN: Los resultados generados por la cirugía bariátrica son alentadores, pero aún no aclaran la forma precisa cómo la cirugía produce una rápida mejoría del metabolismo sistémico como la diabetes, pero en nuestro paciente, el efecto fue muy diferente debido a que el bypass gástrico no tuvo un efecto protector contra la diabetes.

    Promoting sustainable economic development is the basis of the Green Economy: a new vision of Agriculture, Environmental and Regional policy, shared by the wine sector, especially on some crucial issues, such as reducing the consumption of agricultural land, recognition as economically important of the green agricultural production space, spreading of organic farming, adoption of good agricultural practices. Sustainability, in fact , is not just about the use of analysis tools (carbonfoot print, Waterfoot print, etc .) but is about innovations to be introduced in the entire production process, protection of biodiversity, ethic work in the vineyard and winery. It means to disseminate as much as possible all those practices that can enable a more efficient land management also considering the recent climate changes: introduction of agro-energy and precision agriculture, rational use of water resources, creation of an observatory on temperatures and an interactive mapping system, viticultural zoning and municipal planning to make concrete balance between vitality in agronomic sector and landscape quality. Realizing such a regional geopedological mapping about agricultural soil, will allow companies to display a real-time access to all the data needed for a sustainable management of the funds, not only it would be an important tool to support the technical choices of farmers, enhancing their potential and optimizing production in relation to the current climate crisis, but would have a strong impact in terms of managing and saving water and energy resources. A strong efficacy in this context should be recognized at the "Urban Regulation Plans of the Wine Cities", which have developed since 2007 on the base of the guidelines promoted by the Italian Association Città del Vino, in order to enhance the quality of wine districts.     La ingesta dietaria de productos finales de glicación avanzada (AGEs) aumenta los niveles séricos y tisulares de estas sustancias, lo que contribuye a un estado de mayor estrés oxidativo e inflamación. Una intervención dietaria con bajo contenido de AGEs ha demostrado reducir el contenido de AGEs en el cuerpo. La dieta mediterránea (DM) se considera teóricamente baja en AGEs, pero los efectos específicos de este tipo de intervención en los niveles séricos de AGEs no ha sido probado. Metodología: cuarenta y siete mujeres premenopáusicas con sobrepeso u obesidad se sometieron a tres meses de restricción calórica (20 kcal por kg de peso corporal inicial) con una dieta de tipo mediterráneo que excluía la ingesta de vino. La adherencia a la DM se evaluó al comienzo y al final del tratamiento utilizando una encuesta on-line, con puntuaciones de 0 a 14 (mínima a máxima adherencia a la DM). La composición corporal, la resistencia a la insulina, los niveles séricos de lipoproteínas y carboximetil-lisina (CML) se midieron en ambos períodos. El CML sérico se evaluó mediante ELISA (ensayo inmunoenzimático). La adherencia a la restricción calórica se evaluó de acuerdo con la pérdida de peso (< o > 5% del peso inicial). Resultados: la media de peso corporal, grasa corporal, circunferencia de la cintura, colesterol total, triglicéridos y CML sérica disminuyeron significativamente, junto con un aumento en el puntaje de adherencia a la DM, aunque ninguno de los pacientes alcanzó la máxima puntuación. Hubo cambios significativos en los niveles de CML y de resistencia a la insulina en 17 mujeres clasificadas como adherentes a la restricción calórica, pero no en las 27 participantes que fueron consideradas adherentes a la DM (de acuerdo con la mejoría en el puntaje de la encuesta). Conclusiones: los niveles séricos de CML disminuyeron tras la restricción calórica con una dieta tipo mediterránea. Dado que no se pudo alcanzar la puntuación m
