  1. Fermentation kinetics and chemical characterisation of vino tostado, a traditional sweet wine from Galicia (NW Spain).

    Grapes after harvesting are air dried and pressed in order to concentrate sugars, acids and flavour compounds to produce vino tostado (toasted wine), a wine with intense aroma and flavour notes and high residual sugar concentration. In order to get a better knowledge of the difficulties involved, several fermentations were conducted at 12 and 28 degrees C using 0, 15 and 30 g hL(-1) ammonium sulfate and 0, 25 and 50 g hL(-1) exogenous commercial yeast (Saccharomyces cerevisiae var. bayanus) to study the kinetics of sugar consumption and ethanol, acetic acid and glycerol production. Fermentation kinetic parameters were calculated and metal concentrations and antioxidant activity were analysed. The spontaneous fermentation at 12 degrees C and all fermentations conducted with the commercial yeast gave vino tostado of adequate quality, while the spontaneous fermentation at 28 degrees C was sluggish. High-temperature fermentations led to sweeter wines with higher volumetric productivities, although low-temperature fermentations produced better wines in terms of higher glycerol and lower acetic acid levels. Fructose was the only sugar to be consumed during spontaneous fermentations, while both glucose and fructose were consumed during fermentations of the inoculated musts, with preference for each monosaccharide depending on temperature.     The influence of lamb rennet paste (71.1% chymosin, 177 international milk-clotting units/mL, 4.57U/g of lipase activity) during the ripening of Murcia al Vino goat cheese was studied. The aim of this study was to improve the knowledge of the effect of lamb rennet paste on the lipolytic patterns in this type of cheese by reference to the evolution of total and free fatty acids. A sensory analysis was carried out to compare cheeses made with commercial and paste rennet. The rennet paste showed higher lipolytic activity, enhancing the production of short-chain free fatty acids. In addition, the cheese produced with lamb rennet paste had a slightly more bitter and piquant taste, making it an attractive commercial alternative that can be used to develop new varieties of goat cheese.   3. Red or white wine consumption effect on atherosclerosis in healthy individuals (In Vino Veritas study).

    Consumption of wine has a protective effect on cardiovascular diseases. Data from prospective, long-term, head-to-head comparisons of effects of different drinks on markers of atherosclerosis have been insufficient. In Vino Veritas (IVV) study is long-term, prospective, multi-centre, randomized trial comparing effects of red and white wine on atherosclerosis. 157 healthy subjects were randomized to white or red wine consumption for one year. We did not find increase in HDL-cholesterol in the whole group (1.66±0.58 vs 1.62±0.49, p=0.180) or difference between both groups (1.60±0.53 vs 1.64±0.46, p=0.634). At 12 months there was reduction of LDL-cholesterol in both groups, but with no difference between the groups (3.37±0.75 vs 3.60±1.10, p=0.134); there was no difference between the groups in total cholesterol, CRP, fasting blood glucose and liver function tests. Both groups had comparable differences from baseline in levels of parameters of oxidative stress. We did not find any clinically relevant differences in the lipid profile, CRP, fasting blood glucose and other markers of atherosclerosis, between long-term consumption of red and white wine. Moreover, we were unable to confirm the hypothesis that wine drinking is associated with an elevation of HDL (Tab. 7, Fig. 1, Ref. 30).

  4. Dynamic changes in microbiota and mycobiota during spontaneous 'Vino Santo Trentino' fermentation.

    Vino Santo is a sweet wine produced from late harvesting and pressing of Nosiola grapes in a small, well-defined geographical area in the Italian Alps. We used metagenomics to characterize the dynamics of microbial communities in the products of three wineries, resulting from spontaneous fermentation with almost the same timing and procedure. Comparing fermentation dynamics and grape microbial composition, we show a rapid increase in a small number of wine yeast species, with a parallel decrease in complexity. Despite the application of similar protocols, slight changes in the procedures led to significant differences in the microbiota in the three cases of fermentation: (i) fungal content of the must varied significantly in the different wineries, (ii) Pichia membranifaciens persisted in only one of the wineries, (iii) one fermentation was characterized by the balanced presence of Saccharomyces cerevisiae and Hanseniaspora osmophila during the later phases. We suggest the existence of a highly winery-specific 'microbial-terroir' contributing significantly to the final product rather than a regional 'terroir'. Analysis of changes in abundance during fermentation showed evident correlations between different species, suggesting that fermentation is the result of a continuum of interaction between different species and physical-chemical parameters. © 2016 The Author.     Vitis vinifera has been an emblematic plant for Humans since the Neolithic period. Human civilization has been shaped by its domestication as both its medicinal and nutritional values were exploited. It is now cultivated on all habitable continents, and more than 5 thousand varieties have been developed. A global passion for the art of wine fuels innovation and a profound desire for knowledge on this plant. The genome sequence of a homozygotic cultivar and several RNA-seq datasets on other varieties have been released paving the way to gaining further insight into its biology and tailoring improvements to varieties. However, its genome annotation remains unpolished. In this issue of Proteomics, Chapman & Bellgard (Proteomics 2017, 17, XX-XY) discuss how proteogenomics can help improve genome annotation. By mining shotgun proteomics data, they defined new protein-coding genes, refined gene structures, and corrected numerous mRNA splicing events. This stimulating study shows how large international consortia could work together to improve plant and animal genome annotation at a large scale. To achieve this aim, time should be invested to generate comprehensive, high-quality experimental datasets for a wide range of well-defined lineages and exploit them with pipelines capable of handling giant datasets.   6. Usefulness of a large field of view sensor for physicochemical, textural, and yield predictions under industrial goat cheese (Murcia al Vino) manufacturing conditions.

    The applicability of a light backscatter sensor with a large field of view was tested for on-line monitoring of coagulation and syneresis in a goat cheese (Murcia al Vino) manufactured under industrial conditions. Cheesemaking was carried out concurrently in a 12-L pilot vat and a 10,000-L industrial vat following the normal cheesemaking protocol. Cheese moisture, whey fat content, hardness, springiness, and adhesiveness were measured during syneresis. The results obtained show that cutting time is best predicted by considering the coagulation ratio at the inflection point and the percentage increase in the ratio during coagulation, with no need for the first derivative. The large field of view reflectance ratio provided good results for the prediction of moisture content, yield, hardness, springiness, and adhesiveness of the final cheese.

    Polysaccharides and oligosaccharides released into Malvar white wines elaborated through pure, mixed, and sequential cultures with Torulaspora delbrueckii CLI 918 and Saccharomyces cerevisiae CLI 889 native yeasts from D.O. "Vinos de Madrid" were studied. Both fractions from different white wines were separated by high-resolution size-exclusion chromatography. Glycosyl composition and wine polysaccharide linkages were determined by GC-EI-MS chromatography. Molar-mass distributions were determined by SEC-MALLS, and intrinsic viscosity was determined by differential viscometer. Yeast species and type of inoculation have a significant impact on wine carbohydrate composition and structure. Mannose residues from mannoproteins were significantly predominant in those cultures where T. delbrueckii was present in the fermentation process in comparison with when pure cultures of S. cerevisiae were present in the fermenation process. Galactose residues from polysaccharides rich in arabinose and galactose presented greater values in pure cultures of S. cerevisiae, indicating that S. cerevisiae released fewer mannoproteins than T. delbrueckii. Moreover, we reported structural differences between mannoproteins released by T. delbrueckii CLI 918 and those released by S. cerevisiae CLI 889. These findings help to provide important information about the polysaccharides and oligosaccharides released from the cell walls of Malvar grapes and the carbohydrates released from each yeast species.

  10. A pilot randomized trial comparing long-term effects of red and white wines on biomarkers of atherosclerosis (in vino veritas: IVV trial).

    Since early 90', growing body of evidence indicates that the Mediterranean diet with mild to moderate consumption of wine, mostly red wine, has a protective effect on cardiovascular diseases. Several mechanisms have been discussed to participate in the beneficial effect of red wine, such as antioxidant or vasodilating activity. However, later it has been shown that also other alcoholic beverages have a protective effect on atherosclerosis. Up to now, data from the prospective, long-term, head-to-head comparisons of the effects of different drinks on markers of atherosclerosis are insufficient. The IVV (in vino veritas) study is a long-term, prospective, multicenter, randomized trial comparing the effect of red and white wines on the markers of atherosclerosis. One hundred and twenty healthy subjects with mild to moderate risk of atherosclerosis will be randomized to regular consumption of red wine (Pinot Noir) or white wine (Chardonnay-Pinot) for one year. The primary endpoint is the level of HDL-cholesterol at one year, while secondary endpoints are levels of other markers of atherosclerosis (LDL-cholesterol, C-reactive protein, myeloperoxidase, advanced oxidation protein product, interleukins 6 and 18, matrix metalloproteinases, glutathione s-transferase, monocyte chemoattractant protein 1, soluble CD40L). The IVV trial is the first study focusing on the long-term prospective comparison of the effects of red and white wines consumption on HDL-cholesterol and other markers of atherosclerosis. Results of the IVV trial may extend our understanding of the widely discussed "French paradox" (Tab. 1, Ref. 21)

    Numerous epidemiological studies, numbering nearly 100, have documented an inverse association between alcohol consumption and vascular risk. The preponderance of evidence supports an independent beneficial effect of mild-to-moderate alcoholic beverage consumption on risk of coronary heart disease (CHD). However, it is important to remember that observational data cannot prove causation; unmeasured or incompletely controlled confounding factors cannot be excluded. That said, most authorities now attribute a causal role to the relationship: moderate alcohol consumption reduces the risk of CHD, and current research centers on the mechanistic underpinnings and whether patterns of drinking are important. Here, I review the association between alcohol use and CHD risk, explore putative mechanisms, and make recommendations.

  13. In vino veritas? Alcohol, response inhibition and lying.

    Despite the widespread belief that alcohol makes the truth come out more easily, we know very little on how alcohol impacts deception. Given that alcohol impairs response inhibition, and that response inhibition may be critically involved in deception, we expected that alcohol intake would hamper lying. In total, 104 volunteers were tested at a science festival, where they had the opportunity to drink alcohol. Stop-Signal Reaction Times (SSRTs) served as operationalization of response inhibition. Differences in error rates and reaction times (RTs) between lying and truth telling served as indicators of the cognitive cost of lying. Higher blood alcohol concentration was related to longer SSRTs, but unrelated to the cognitive costs of lying. This study validates previous laboratory research on alcohol and response inhibition in a realistic drinking environment, yet failed to find an effect of alcohol on lying. Measurements on a number of glasses are interpreted with the help of theoretical predictions based on the analysis of vibrating systems by means of the energy method. Results and analysis are given for empty glasses and for glasses containing different amounts of liquid. Evidence for vibrational modes above the lowest is presented.

  17. Estimating building exposure and impact to volcanic hazards in Icod de los Vinos, Tenerife (Canary Islands)

    Principal and subsidiary building structure characteristics and their distribution have been inventoried in Icod, Tenerife (Canary Islands) and used to evaluate the vulnerability of individual buildings to three volcanic hazards: tephra fallout, volcanogenic earthquakes and pyroclastic flows. The procedures described in this paper represent a methodological framework for a comprehensive survey of all the buildings at risk in the area around the Teide volcano in Tenerife. Such a methodology would need to be implemented for the completion of a comprehensive risk assessment for the populations under threat of explosive eruptions in this area. The information presented in the paper is a sample of the necessary data required for the impact estimation and risk assessment exercises that would need to be carried out by emergency managers, local authorities and those responsible for recovery and repair in the event of a volcanic eruption. The data shows there are micro variations in building stock characteristics that would influence the likely impact of an eruption in the area. As an example of the use of this methodology for vulnerability assessment, we have applied a deterministic simulation model of a volcanic eruption from Teide volcano and its associated ash fallout which, when combined with the vulnerability data collected, allows us to obtain the vulnerability map of the studied area. This map is obtained by performing spatial analysis with a Geographical Information System (GIS). This vulnerability analysis is included in the framework of an automatic information system specifically developed for hazard assessment and risk management on Tenerife, but which can be also applied to other volcanic areas. The work presented is part of the EU-funded EXPLORIS project (Explosive Eruption Risk and Decision Support for EU Populations Threatened by Volcanoes, EVR1-2001-00047).

  18. In vino silentium? Individual, situational, and alcohol-related factors in reporting violence to the police.

    This study identifies the individual, situational, and alcohol-related factors associated with reporting violent victimization to the police. Factors positively associated with reporting included older age and incident severity (the assailant's use of a weapon, incurring injury that required attendance at an emergency department). Factors negatively associated with reporting included higher educational qualifications, assault in the nighttime economy (NTE), and drinking more than two alcoholic drinks immediately prior to victimization. It is possible that drinkers engage in "moratorium" on reporting violence in the NTE. Recognizing and reducing the acceptability of violence in the NTE may help reduce incidence of alcohol-related violence. Organizations that use police records of violence to inform practice and policy should account for uneven distributions in reporting behavior when analyzing trends in violence.

    Nitrous oxide causes an acute increase in plasma homocysteine that is more pronounced in patients with the methylenetetrahydrofolate reductase (MTHFR) C677T or A1298C gene variant. In this randomized controlled trial, the authors sought to determine whether patients carrying the MTHFR C677T or A1298C variant had a higher risk for perioperative cardiac events after nitrous oxide anesthesia and whether this risk could be mitigated by B-vitamins. The authors randomized adult patients with cardiac risk factors undergoing noncardiac surgery, to receive nitrous oxide plus intravenous B-vitamins before and after surgery, or to nitrous oxide and placebo. Serial cardiac biomarkers and 12-lead electrocardiograms were obtained. The primary study endpoint was the incidence of myocardial injury, as defined by cardiac troponin I increase within the first 72 h after surgery. A total of 500 patients completed the trial. Patients who were homozygous for either MTHFR C677T, or A1298C gene variant (n=98; 19.6%) had no increased rate of postoperative cardiac troponin I increase compared with wild-type and heterozygous patients (11.2 vs. 14.0%; relative risk 0.96; 95% CI, 0.85-1.07; P=0.48). B-vitamins blunted the rise in homocysteine, but had no effect on cardiac troponin I increase compared with patients receiving placebo (13.2 vs. 13.6%; relative risk 1.02; 95% CI 0.78 to 1.32; P=0.91). Neither MTHFR C677T and A1298C gene variant, nor acute homocysteine increase are associated with perioperative cardiac troponin increase after nitrous oxide anesthesia. B-vitamins blunt nitrous oxide-induced homocysteine increase but have no effect on cardiac troponin I increase.

  1. Value of first day angiography/angioplasty in evolving Non-ST segment elevation myocardial infarction: an open multicenter randomized trial. The VINO Study.

    Direct angioplasty is an effective treatment for ST-elevation myocardial infarction. The role of very early angioplasty in non-ST-elevation infarction is not known. Thus, a randomized study of first day angiography/angioplasty vs early conservative therapy of evolving myocardial infarction without persistent ST-elevation was conducted. One hundred and thirty-one patients with confirmed acute myocardial infarction without ST-segment elevations were randomized within 24 h of last rest chest pain: 64 in the first day angiography/angioplasty group and 67 in the early conservative group (coronary angiography only after recurrent or stress induced myocardial ischaemia). All patients in the invasive group underwent coronary angiography on the day of admission (mean randomization-angiography time 6.2 h). First day angioplasty of the infarct related artery was performed in 47% of the patients and bypass surgery in 35%. In the conservative group, 55% underwent coronary angiography, 10% angioplasty and 30% bypass surgery within 6 months. The primary end-point (death/reinfarction) at 6 months occurred in 6.2% vs 22.3% (P<0.001). Six month mortality in the first day angiography/angioplasty group was 3.1% vs 13.4% in the conservative group (P<0.03). Non-fatal reinfarction occurred in 3.1% vs. 14.9% (P<0.02). First day coronary angiography followed by angioplasty whenever possible reduces mortality and reinfarction in evolving myocardial infarction without persistent ST-elevation, in comparison with an early conservative treatment strategy.   3. An Updated Review of Institutions of Higher Education's Responses to Sexual Assault: Results From a Nationally Representative Sample.

    It has been more than a decade since Karjane, Fisher, and Cullen reviewed a nationally representative sample of Institutions of Higher Education (IHEs) and documented "sexual assault on college campuses" and "what colleges are doing about it." The current research aimed to examine the current state of IHE's response to campus sexual assault as well as any changes in IHE's response over the previous decade. To this end, the present study provides a comparison of data reported in Karjane et al. and 2015 data from a statistically equivalent sample (n = 820). IHE's utilization of policies and procedures that reflect recent guidance by the Department of Education's Office for Civil Rights (OCR) and best practices indicated by the 2014 White House Task Force to Protect Students From Sexual Assault are also presented and discussed.

    Polymeric micelles had been used as an efficacious carrier system for anti-cancer drug delivery. However, it is not clear whether the molecular mechanism of drug encapsulated in micelles is same as free drug. In this study, the mechanism of vinorelbine loaded in glycol-phosphatidylethanolamine (PEG-PE) micelles (M-Vino) on tumor cells was investigated. Compared with free vinorelbine (Free Vino), M-Vino was more effective in inhibiting the growth of tumor cells in vitro, inducing G(2)/M phase arrest and apoptosis of tumor cells. M-Vino showed a faster entry and higher accumulation in 4T1 cells than free vinorelbine. Therefore, M-Vino destabilized microtubules, induced cell death, and enhanced its cytotoxicity through more intercellular accumulation of vinorelbine.

    To assess the burden of disease associated with advanced breast cancer (ABC) treated with oral (VinO) or intravenous vinorelbine (VinIV) from the perspective of patients and caregivers in five European countries. This was an observational, prospective, international, multicenter study. Patients were included in the study at the beginning of their second cycle of chemotherapy with vinorelbine and categorized into two groups depending on whether they received VinO or VinIV. At baseline (V0) and at the end of the second cycle of chemotherapy (V1), patients and caregivers were asked to complete self-administered questionnaires: SF-12 and burden of disease. At baseline, the two groups were well balanced in demographic and clinical characteristics. However, while HER2+ (human epidermal growth factor receptor 2) disease was significantly more frequent in patients receiving VinIV, patients receiving VinO were predominantly treated with single-agent therapy and were older than those treated with VinIV (67.1 years versus 57.7 years [p = 0.05]). As measured with SF-12, patients with VinO had, at end of cycle 1 and end of cycle 2, significantly more favorable outcomes in physical summary score, role physical, role emotional and mental health (all p < 0.05) than those treated with VinIV. Trends for a better caregiver mental score and social functioning were also observed with VinO (cycle 1 and 2; p < 0.10). From a patient perspective, no major difference was reported on the burden of disease between the two groups, however, a trend for a better" overall impact on daily life" was observed in VinO patients. Major significant differences, showing a lower burden of disease with VinO, were also reported from caregivers. In addition, in patients treated with VinO, mental score was almost similar to the one of the general population. VinO showed benefits over VinIV for both patients and caregivers, particularly in health related quality of life and burden of disease

    High-density genotyping arrays that measure hybridization of genomic DNA fragments to allele-specific oligonucleotide probes are widely used to genotype single nucleotide polymorphisms (SNPs) in genetic studies, including human genome-wide association studies. Hybridization intensities are converted to genotype calls by clustering algorithms that assign each sample to a genotype class at each SNP. Data for SNP probes that do not conform to the expected pattern of clustering are often discarded, contributing to ascertainment bias and resulting in lost information - as much as 50% in a recent genome-wide association study in dogs. We identified atypical patterns of hybridization intensities that were highly reproducible and demonstrated that these patterns represent genetic variants that were not accounted for in the design of the array platform. We characterized variable intensity oligonucleotide (VINO) probes that display such patterns and are found in all hybridization-based genotyping platforms, including those developed for human, dog, cattle, and mouse. When recognized and properly interpreted, VINOs recovered a substantial fraction of discarded probes and counteracted SNP ascertainment bias. We developed software (MouseDivGeno) that identifies VINOs and improves the accuracy of genotype calling. MouseDivGeno produced highly concordant genotype calls when compared with other methods but it uniquely identified more than 786000 VINOs in 351 mouse samples. We used whole-genome sequence from 14 mouse strains to confirm the presence of novel variants explaining 28000 VINOs in those strains. We also identified VINOs in human HapMap 3 samples, many of which were specific to an African population. Incorporating VINOs in phylogenetic analyses substantially improved the accuracy of a Mus species tree and local haplotype assignment in laboratory mouse strains.     Introducción: El cáncer se ha convertido en las últimas décadas en una de las principales causas de muerte en todo el mundo. La búsqueda para la prevención efectiva, se ha convertido en una prioridad para la ciencia básica y clínica. Los polifenoles del vino se han propuesto como terapia alternativa para inducir o mantener la remisión del cáncer. Objetivo: Revisar las evidencias científicas publicadas sobre el cáncer y la eficacia de la terapia con suplementos dietarios (especialmente polifenoles del vino). Material y métodos: Se ha realizado una extensa búsqueda de publicaciones científicas en las principales bases de datos electrónicas especializadas: NBCI, Elsevier, Scielo, Scirus y Science Direct. Resultados y Discusión: Se han reunido resultados de trabajos realizados in vitro y en animales de laboratorio en los que se pone de manifiesto el efecto de los polifenoles del vino (especialmente, el resveratrol) en el control de la apoptosis celular de diferentes tipos de cánceres mediante un aumento de las especies reactivas de oxígeno, así como también el retardo en el crecimiento de las mismas. El consumo de vino regular y moderado (uno o dos vasos al día) se asocia con la disminución de la incidencia de enfermedad cardiovascular, la hipertensión, la diabetes, y ciertos tipos de cáncer, como el de colon, el de mama, el de pulmón, o de próstata. Sin embargo, las evidencias científicas a cerca de los efectos protectores del resveratrol son insuficientes. Conclusiones:Los resultados publicados hasta la fecha referentes al rol de los polifenoles del vino en la prevención del cáncer contribuyen al mejor conocimiento y entendimiento de las modificaciones moleculares del cáncer. Los polifenoles del vino ha demostrado un papel significativo como antioxidante y prooxidante en el cáncer, aunque son necesarias más investigaciones en humanos.

    Enzymes present in the flowers of Cynara cardunculus (cyprosins) are used in the production of some traditional Spanish and Portuguese cheeses, replacing animal rennet. The aim of this work was to study the changes that take place in free amino acids during the ripening of a goat's milk cheese (Murcia al Vino) manufactured with plant coagulant (PC) or animal rennet (AR). The total free amino acid (TFAA) concentration increased during ripening, with Ile, Val, Ala, Phe, Gaba, Arg and Lys representing more than 50% of the TFAA content at 60 days in both types of cheese. The TFAA concentration was significantly higher in cheeses made with PC (854 mg 100 g(-1) total solids (TS)) than those made with AR (735 mg 100 g(-1) TS). The concentration of most free amino acids, especially His, Ser, Gln, Thr, Ala, Met and Ile, was higher in the PC cheese. Cheese made using PC as coagulant presented higher contents of free amino acid throughout the ripening period than cheese made using AR. Therefore we can conclude that the use of PC to produce Murcia al Vino goat's cheese would accelerate the ripening process as a result of increased cyprosin proteolytic activity.     Few allergic reactions to grape are reported in the literature. In some cases an association with peach and cherry allergy was observed. No IgE-mediated reactions to wine have been described, and no grape major allergens have yet been identified. We describe several severe reactions to grape or wine. We characterized the grape major allergens and tried to identify the allergen in wine. We collected documented histories of allergic reactions to grape and wine. Grape allergens were identified by means of SDS-PAGE and immunoblotting and purified by means of HPLC. Using amino acid sequencing and mass spectrometry, we identified the family of proteins to which the allergens belong. Cross-reactivity with peach and cherry was evaluated by means of cross-wise inhibition experiments. Eleven patients with reactions to grape and 3 with anaphylactic reactions to wine were recruited. The major allergens were an endochitinase 4A and a lipid-transfer protein (LTP) that was homologous to and cross-reactive with peach LTP. A 24-kd protein homologous to the cherry thaumatin-like allergen was a minor allergen. Endochitinase 4A is very likely the allergen in vino novello and in vino Fragolino. Grape and wine might cause severe allergic reactions in sensitive patients. The major allergens of grape are endochitinase 4A, which is also the allergen of wine, and an LTP cross-reacting with the peach major allergen.

    The objective of this study was to examine the Saccharomyces and non-Saccharomyces yeast populations involved in a spontaneous fermentation of a traditional high sugar must (Vino cotto) produced in central Italy. Molecular identification of a total of 78 isolates was achieved by a combination of PCR-RFLP of the 5.8S ITS rRNA region and sequencing of the D1/D2 domain of the 26S rRNA gene. In addition, the isolates were differentiated by RAPD-PCR. Only a restricted number of osmotolerant yeast species, i.e. Candida apicola, Candida zemplinina and Zygosaccharomyces bailii, were found throughout all the fermentation process, while Saccharomyces cerevisiae prevailed after 15 days of fermentation. A physiological characterization of isolates was performed in relation to the resistance to osmotic stress and ethanol concentration. The osmotolerant features of C. apicola, C. zemplinina and Z. bailii were confirmed, while S. cerevisiae strains showed three patterns of growth in response to different glucose concentrations (2%, 20%, 40% and 60% w/v). The ability of some C. apicola and C. zemplinina strains to grow at 14% v/v ethanol is noteworthy. The finding that some yeast biotypes with higher multiple stress tolerance can persist in the entire winemaking process suggests possible future candidates as starter for Vino cotto production.

    The major volatiles of eighty eight wines (white, rosè and red) from Madrid were studied. The samples came from the three districts forming the "Vinos de Madrid" DO (Denominación de Origen) region: Arganda, Navalcarnero and San Martín, and were analyzed by gas chromatography. The resulting data were treated by Stepwise Discriminant Analysis (SDA) in order to ascertain the efficacity of these compounds in classifying the wines according to their geographical origin. The results confirm that the above components were of little use in classifying the red and white wines and, although a correct classification percentage of 90.91% was obtained for the rosés when all the variables were used, this too was considered unsatisfactory.

    Although the positive role of non-Saccharomyces yeasts on the overall quality of wine is encouraging research into their oenological potential, current knowledge on the topic is still far from satisfactory. This work analyzes the contribution of starter cultures of Torulaspora delbrueckii, inoculated sequentially with Saccharomyces cerevisiae (multi-starter fermentation), on the fermentation and aromas of two different white style wines, i.e., dry and sweet wines. Chemical analysis of Soave and Chardonnay wines (dry wines) showed that multi-starter fermentation greatly affected the content of several important volatile compounds, including 2-phenylethanol, isoamyl acetate, fatty acid esters, C4-C10 fatty acids and vinylphenols. Moreover, strain-specific contributions have been shown by testing two different T. delbrueckii strains. Evidence of the positive impact of T. delbrueckii activity on wine quality was also demonstrated in Vino Santo, a sweet wine. Due to its low production of acetic acid, this non-Saccharomyces yeast is recommended for the fermentation of high sugar grapes. T. delbrueckii also influenced the content of different variety of chemical groups, including lactones. From a sensory perspective, all wines produced by multi-starter fermentation have greater aromatic intensity and complexity than wines resulting from a monoculture fermentation. These results emphasize the potential of employing T. delbrueckii, in association with S. cerevisiae, for the production of white wines of different styles with improved and enhanced flavour.

  20. The phenotypic characterization of yeast strains to stresses inherent to wine fermentation in warm climates.

    Climate change is exerting an increasingly profound effect on grape composition, microbiology, chemistry and the sensory aspects of wine. Identification of autochthonous yeasts tolerant to stress could help to alleviate this effect. Tolerance to osmotic pressure, ethanol and pH of 94 Saccharomyces cerevisiae strains and 29 strains non-Saccharomyces from the warm climate region DO 'Vinos de Madrid' (Spain) using phenotypic microarray and their fermentative behaviour were studied. The screening highlighted 12 strains of S. cerevisiae isolated from organic cellars with improved tolerance to osmotic stress, high ethanol concentrations and suitable fermentative properties. Screening of non-Saccharomyces spp. such as Lanchacea thermotolerans, Torulaspora delbrueckii, Schizosaccharomyces pombe and Mestchnikowia pulcherrima also highlighted tolerance to these stress conditions. This study confirmed the adaptation of native strains to the climatic conditions in each area of production and correlated these adaptations with good fermentation properties. Screening has revealed that identifying yeast strains adapted to fermentation stresses is an important approach for making quality wines in very warm areas. The results have special relevance because it is a pioneering study that has approached the problem of climate change for wines from a microbiological aspect and has analysed the situation in situ in wineries from a warm climate zone. Resistant strains were found with good biological properties; studying these strains for their stress response mechanisms during fermentation will be of interest to the wine making industry. © 2016 The Society for Applied Microbiology.

    Pathogenic strains of Acanthamoeba are causative agents of a sight-threatening infection of the cornea known as Acanthamoeba keratitis, which is often associated with the misuse of contact lenses. However, there is still a question remaining to be answered, which is whether these micro-organisms are present on the ocular surface of healthy individuals. Therefore, the aim of this study was to determine the presence of Acanthamoeba on the ocular surface in healthy patients and also in those with other ocular surface infections. Sterile Schirmer test strips were used to collect samples from a group of patients who attended an ophthalmology consultation at the Hospital del Norte, Icod de los Vinos, Tenerife, Canary Islands. Most of the patients (46 individuals, 79.31  %) presented ocular surface pathologies such as blepharitis or conjunctivitis; the rest did not present any pathology. None of the patients included in the study wore contact lenses. The collected samples were cultured in 2  % non-nutrient agar plates and positive plates were then cultured in axenic conditions for further analyses. Molecular analysis classified all isolated strains as belonging to Acanthamoeba genotype tbl4, and osmotolerance and thermotolerance assays revealed that all strains were potentially pathogenic. Furthermore, all strains were assayed for sensitivity against voriconazole and chlorhexidine. Assays showed that both drugs were active against the tested strains. In conclusion, the Schirmer strip test is proposed as an effective tool for the detection of Acanthamoeba on the ocular surface.

    The aim of this study was to evaluate the effect of feeding goats with distilled and non-distilled thyme leaves (Thymus zygis subsp. gracilis) on the physicochemical composition and technological properties of pasteurised goat milk, and on the physicochemical composition, phenolic content, oxidative stability, microbiology, sensory and texture profile of Murcia al Vino goat cheese. One group of goats was fed the basal diet (control), the second and third groups were fed with different levels of distilled (10 and 20%) or non-distilled (3·75 and 7·5%) thyme leaves. Goat milk physicochemical composition was significantly affected by the substitution of 7·5% of basal goat diet with non-distilled thyme leaves (increase in fat, protein, dry matter and PUFA content), while goat milk clotting time was increased significantly by the introduction of 20% distilled thyme leaves, which reduces its technological suitability. Microbiology, sensory and texture profiles were not affected by the introduction of distilled thyme leaves. The introduction of distilled and non-distilled thyme leaves as an alternative feed to diet can lead to an inhibition of lipids oxidation. The introduction of distilled and non-distilled thyme leaves into goat's diet can be successfully adopted as a strategy to reduce feeding costs and to take advantage of the waste from the production of essential oils, minimising waste removing costs and the environmental impact.

    Analysis of the diversity and distribution of wine yeasts isolated from organically and conventionally grown grapes, and during the subsequent fermentation with or without starter cultures in six different commercial wineries. PCR-RFLP screening of isolates revealed the involvement of ten different species. Saccharomyces cerevisiae, scarcely isolated from grapes, was the dominant species during the latter phases of fermentation, identifying 108 different genotypes by means of SSR analysis. Species and strains' diversity and presence were strongly influenced by the farming system used to grow the grapes and the system of vinification. Organic farming management was more beneficial in terms of diversity and abundance than the conventional one. Induced fermentation generated a great replacement of native yeasts. Although winery-resident yeasts resulted to be predominant in the process, some noncommercial strains originally in the vineyard were found in final stages of the fermentation, confirming that autochthonous strains of S. cerevisiae are capable to conduct the fermentation process up to its end. The study of natural yeast communities from commercial vineyards and wineries is an important step towards the preservation of native genetic resources. Our results have special relevance because it is the first time that the real situation of the yeast ecology of alcoholic fermentation in commercial wineries belonging to the relevant wine-producing Appellation of Origin 'Vinos de Madrid' is shown. © 2012 The Authors.     The efficacy of anthracyclin-containing adjuvant chemotherapy of node-positive breast cancer can be further improved by adding sequential paclitaxel (T). There is also clinical evidence that replacing cyclophosphamide (C) with vinorelbin (V) might further reduce toxicity. In order to assess the safety of these options, we initiated a clinical cohort study of epirubicin/cyclophoshamide and epirubicin/vinorelbine with or without sequential paclitaxel. Patients with node-positive (1-3) breast cancer were assigned to open-label epirubicin/vinorelbine (EV), epirubicin/vino-relbine and sequential paclitaxel (EV/T), epirubicin/cyclophosphamide (EC) or epirubicin/cyclophosphamide plus sequential paclitaxel (EC/T) therapy. Fifty four outpatients received a total of 304 chemotherapy cycles. There were significant differences in grade III/IV anemia only between the EV/T and EC/T groups, in favor of the EC/T group (P=0.002). The safety of paclitaxel is not impaired when given sequentially after administration of the two anthracyclin-containing regimens. The exchange of cyclophosphamide against vinorelbine leads to deteriorating safety of the EC/T regimen.

    Historically, states of intoxication--like dreams and madness--are seen in either one of two opposed ways. The intoxicated are either "possessed" or "under the influence" of an external agency, or revealing hidden feelings or truths (in vino veritas). Along the same lines, artists who worked during LSD, mescalin or psilocybin intoxication often refer to feelings of either being "possessed" or "liberated," a difference that can be explained partly by their expectations and partly by their evaluations, which both tend to conform to the cultural dichotomy in interpreting the irrational. Both interpretations, however, tend to obscure not only the other, but also-it is posited-the paradoxical nature of the drug experience itself. Analysis of a protocol shows that intoxication might comprise feelings of "possession" as well as "liberation" almost simultaneously, and mediumistic and some psychedelic art shows stylistic traits that can be seen as the visual expressions of both these feelings. It seems that the "demoniacal" and "psychedelic" mode come together in experiential reality, only to be divided in the cultural sphere.

    Alcohol's function as a regulator of emotions has long been denoted in figures of speech, most famously 'in vino, veritas' (in wine, truth). In contrast, we ask whether an individual's self-reported alcohol consumption and related attitudes can be correlated with the words they use to write about alcohol. Participants completed an open-ended essay as part of a survey on alcohol attitudes and behaviors. We used a computerized technique, the Meaning Extraction Method, to summarize the responses into thematic tropes, and correlated these with quantitative measurements of demographics, attitudes and behaviors. Participants were recruited using a random population postal survey in the UK (n=1001). Principal components analysis identified regular co-occurring words, to locate themes in the responses. Seven themes were identified that corresponded to both negative and positive aspects of alcohol consumption ranging from concern for the influence of alcohol on others (e.g., children and family) to participants' own enjoyment of alcohol (e.g., social drinking).     The subject of this symposium is naproxen, a new drug that resulted from an investigation to find a superior anti-inflammatory agent. It was synthesized by Harrison et al. in 1970 at the Syntex Institute of Organic Chemistry and Biological Sciences. How can we chart the evolution of this or any other drug? Three steps are necessary: first, chemical studies (synthesis, analysis); second, animal pharmacology; third, human pharmacology. The last step can additionally be divided into four phases: metabolism and toxicology of the drug in normal volunteers; dose titration and initial clinical trials with sick subjects (pharmacometry); confirmatory clinical trials when the drug is accepted on the market and revaluation (familiarization trials). To discover the truth about naproxen, we must all participate actively with a critical mind, following the principles of scientific methodology. We shall find that the papers to be presented today all deal with the third step in the evaluation process--clinical pharmacology. It is quite evident that the final and most decisive test must be aimed at the most valuable target: the human being. The end product of this day's work for each of us should be the formation of an opinion based on solid scientific proofs. And let us hope that we will all enjoy fulfilling the symposium in its entire etymological meaning this evening. In vino veritas.

  8. [Organic and functional limitations due to milking phenomenon: a clinical case report].

    INTRODUCCIÓN: según series angiográficas, la incidencia del fenómeno de milking oscila entre 0.6 y 4 %, sin embargo, en estudios de autopsias hasta en 85 % se ha identificado puente miocárdico, patognómónico de este trastorno. La malformación del fenómeno de milking no es identificada en la mayoría de las ocasiones, pero puede tener grandes repercusiones. El propósito es ejemplificar un caso de fenómeno de milking con consecuencias de incapacidad permanente y consecuencias laborales. CASO CLÍNICO: hombre de 44 años de edad que laboralmente se ocupaba como peón albañil y peón agrícola. Como antecedentes refirió amigdalectomía y artrosis, tabaquismo de 10 cigarrillos diarios, dos o tres tazas de café diarias y dos o tres copas de vino en fin de semana. Mediante electrocardiograma se identificó ritmo sinusal y bloqueo incompleto de la rama derecha del fascículo atrioventricular. Su frecuencia cardiaca fue de 90 latidos por minuto. Para la prueba de esfuerzo se utilizó el protocolo de Bruce, que se detuvo en el primer estadio debido a crisis hipertensiva y fibrilación auricular paroxística. El cateterismo mostró tronco común izquierdo, arteria coronaria cincunfleja y arteria coronaria derecha sin lesiones, arteria descendente anterior sin lesiones con trayecto intramiocárdico y compresión sistólica en segmento medio, con lo cual se integró el diagnóstico de milking coronario. El paciente requirió incapacidad permanente total con limitación para actividades que necesitaran esfuerzo moderado.

    A review of recent developments in the applications of N=1 Supergravity to the construction of unified models of elementary particle interactions is given. Couplings of N=1 Supergravity with matter consisting of an arbitrary set of l handed multiplets and a gauge multiplet are discussed. General formulation of spontaneous symmetry breaking and the criteria for breaking of internal symmetry and of local supersymmetry are described. Construction of specific Supergrvity GUT models, the gauge heirarchy in GUT models and a deduction of the low energy effective potential are discussed. The phenomena of SU(2)XU(1) electro-weak gauge invariance breakdown by Supergravity in tree models and by radiative corrections using renormalization group methods are described. Model independent formulations of low energy physics which encompass tree and the renormalization group methods of breaking SU(2)XU(1), but also allow more general scenarios are discussed. The particle content of Supergravity unified theories at low energy is given which includes predictions, for a class of supergravity models, of light gauge fermins, i.e. of a charged Dirac fermion, the Wino, with a mass below the W boson mass and a neutral fermion, the Zino, below the mass of the Z boson mass. "Direct" gaugino masses arising from loops for the photino and the gluino, (which are massless at the tree level) are exhibited. Decays of the W and Z into photino. Vino, and Zino modes and their branching ratios into various channels are given. Experimental signals for the supersymmetrie decays are discussed and some prominent signatures such as decays into one and two jets with unbalanced energy and momentum are pointed out. The current status of the ρ-parameter, including supergravity GUT effects is given. Other experimental consequences of supergravity unified theories are also discussed.

  10. High-sensitivity cardiac troponin T in prediction and diagnosis of myocardial infarction and long-term mortality after noncardiac surgery.

    Perioperative myocardial infarction (MI) is a serious complication after noncardiac surgery. We hypothesized that preoperative cardiac troponin T detected with a novel high-sensitivity (hs-cTnT) assay will identify patients at risk for acute MI and long-term mortality after major noncardiac surgery. This was a prospective cohort study within the VINO trial (n = 608). Patients had been diagnosed with or had multiple risk factors for coronary artery disease and underwent major noncardiac surgery. Cardiac troponin I (contemporary assay) and troponin T (high-sensitivity assay) and 12-lead electrocardiograms were obtained before and immediately after surgery and on postoperative days 1, 2, and 3. At baseline before surgery, 599 patients (98.5%) had a detectable hs-cTnT concentration, and 247 (41%) were >14 ng/L (99th percentile). After surgery, 497 patients (82%) had a rise in hs-cTnT (median change in hs-cTnT +2.7 ng/L [interquartile range 0.7-6.8]). During the first 3 postoperative days, there were 9 patients (2.5%) with a preoperative hs-cTnT <14 ng/L with acute MI, compared with 21 patients (8.6%) with a preoperative hs-cTnT >14 ng/L (odds ratio 3.67, 95% CI 1.65-8.15). During long-term follow-up, 80 deaths occurred. The 3-year mortality rate was 11% in patients with a preoperative hs-cTnT concentration <14 ng/L compared with 25% in patients with a preoperative hs-cTnT >14 ng/L (adjusted hazard ratio 2.17, 95% CI 1.19-3.96). In this cohort of high-risk patients, preoperative hs-cTnT concentrations were significantly associated with postoperative MI and long-term mortality after noncardiac surgery.     Introducción: los adultos mayores no institucionalizados son un colectivo que suele presentar alto riesgo de malnutrición. Detectar problemas nutricionales mediante indicadores de la calidad global de la dieta, es un reto para los profesionales de la salud, de utilidad para la planificación de políticas nutricionales. Objetivo: determinar la calidad global de la dieta de la población española mayor de 80 años no institucionalizada, para promover y fomentar la calidad de vida del anciano. Metodología: se seleccionaron las personas mayores de 80 años del Estudio Longitudinal Envejecer en España 2011-2013 (n = 159), residentes en diversas zonas españolas. Para valorar la calidad de la dieta se utilizó el índice de alimentación saludable (IAS), la frecuencia de consumo de alimentos y el grado de adhesión al patrón de dieta Mediterránea (ADM). Resultados: la población presentó valores de IAS cercanos a los correspondientes a una dieta saludable. Un porcentaje significativo necesitaba cambios en su alimentación, siendo los mayores de 90 años los que requirieron una mayor intervención dietética. La mayoría de la población cumplió las recomendaciones de la dieta mediterránea, aunque se observó bajo consumo de verduras, hortalizas, frutos secos y vino; y elevado consumo de embutidos. Conclusiones: la dieta consumida habitualmente por los españoles mayores de 80 años no institucionalizados presenta desajustes nutricionales que podrían corregirse realizando pequeños cambios en su patrón dietético. Determinar la calidad global de la dieta permite la planificación de estrategias de intervención para promover cambios alimentarios saludables y emprender acciones orientadas al mantenimiento de una salud óptima en el binomio envejecimiento-nutrición.

  12. Development of type 2 diabetes mellitus thirty-one years after Billroth II in a patient asking for diabetes surgery.

    INTRODUCCIÓN: La cirugía de la diabetes en pacientes obesos y delgados parece ser una alternativa superior al tratamiento médico actual. El bypass gástrico es un tratamiento alternativo al tratamiento médico actual. Sin embargo, todavía hay dudas sobre si la diabetes puede reaparecer si hay aumento de peso o si se mantienen los efectos en el tiempo. Otras preguntas se refieren al tipo de cirugía para hacer la longitud del remanente gástrico o el tamaño del reservorio para la resolución de la Diabetes Mellitus. Presentación del caso: Paciente masculino de 69 años de edad, vino a nosotros con el fin de realizar el bypass gástrico de una anastomosis a medida (BAGUA) para tratar su diabetes mellitus tipo 2 y el síndrome metabólico. Tiene antecedentes de úlcera péptica tratado con gastrectomía subtotal y reconstrucción tipo Billroth II hace 49 años. Actualmente él no es obeso y desarrolló diabetes 31 años después de la cirugía. DISCUSIÓN: A nivel mundial no hay reportes de pacientes con IMC normal que después de realizar un bypass gástrico desarrollaron diabetes mellitus. Hay casos en que los pacientes diabéticos obesos después del bypass gástrico mejoran o remite la DMT2, pero reaparece debido a la pérdida de peso insuficiente o reganancia de él. El paciente con un bypass gástrico tipo Billroth II, no debió desarrollar diabetes. Él tiene peso normal y no ha aumentado de peso que podría estar relacionado con el desarrollo de diabetes. CONCLUSIÓN: Los resultados generados por la cirugía bariátrica son alentadores, pero aún no aclaran la forma precisa cómo la cirugía produce una rápida mejoría del metabolismo sistémico como la diabetes, pero en nuestro paciente, el efecto fue muy diferente debido a que el bypass gástrico no tuvo un efecto protector contra la diabetes.

    Objetivo: La etapa universitaria conlleva una serie de cambios emocionales, fisiológicos y ambientales que van a determinar unas costumbres y hábitos de riesgoque en muchos casos serán mantenidos a lo largo de la vida y repercutirán en su estado de salud. El objetivo del presente estudio es analizar el estilo de vida (consumo de alcohol, tabaco y niveles de actividad física) de mujeres estudiantes de la Universidad de Granada. Metodología: Se trata de un estudio transversal/descriptivo y analítico en el que han participado 55 estudiantes de dos grupos de edad (18-24 y 25-31años). Se aplicó un cuestionario de estilo de vida evaluando el tipo de alcohol y frecuencia de consumo, cantidad de cigarrillos consumidos diariamente y niveles de actividad física (sedentaria, ligera, moderada e intensa). Resultados: El consumo de alcohol es mayor en el grupo de mayor edad, y con preferencia beben cerveza/vino, sin embargo el grupo más joven muestra un patrón de consumo centrado en los fines de semana siendo las bebidas destiladas las consumidas preferentemente. Una tercera parte de la población fuma con un incremento en el número de cigarros conforme aumenta la edad. Existe una correlación positiva entre tabaco y alcohol. El 88.9% del grupo de menor edad y el 52.7% del grupo de mayor edad tienen una actividad física sedentaria-ligera. Conclusión: Se sugiere la necesidad de concienciar a la población femenina universitaria sobre los beneficios del abandono del consumo de alcohol y tabaco y la práctica regular de ejercicio físico. Además, sería aconsejable desarrollar protocolos de intervención educativa en el ámbito universitario potenciando los hábitos de vida saludables.

  14. [Cancer and its association with dietary patterns in Córdoba (Argentina)].

    Introducción: La alimentación es un importante factor vinculado a la ocurrencia del cáncer. Su abordaje en términos de patrones alimentarios es de creciente interés en epidemiología nutricional, no obstante ha sido pocas veces empleado en Latinoamérica. Objetivos: Identificar patrones alimentarios en la población adulta de Córdoba (Argentina) y estimar sus efectos sobre el riesgo de ocurrencia de cáncer colorrectal (CCR), cáncer de mama (CM), cáncer de próstata (CP) y urotelial (CU). Métodos: Se condujeron estudios caso-control, 2006-2012, correspondientes a CCR, CM, CP y CU. Empleando un análisis factorial de componentes principales se identificaron patrones alimentarios. Se estimaron ORs mediante regresión logística multinivel. Resultados: Se identificaron patrones característicos en la población general, y en hombres y mujeres independientemente. En población total, los patrones Cono Sur y Bebidas Azucaradas evidenciaron un efecto promotor para CCR y CU, y el Patrón Prudente mostró efecto protector. En mujeres, el CM se asoció de manera directa con los patrones Cono Sur Femenino, Rural y Amiláceo, e inversa con el Patrón Prudente. En hombres, los Patrones Cono Sur Masculino, Bebidas Azucaradas y Típico Mesurado mostraron un efecto promotor para CP. Conclusión: Resulta necesario promover una ingesta habitual de vegetales, frutas y lácteos (éstos últimos de manera moderada en hombres), y disminuir el consumo de carnes rojas (fundamentalmente grasas), carnes procesadas, vegetales amiláceos, vino y bebidas azucaradas, a fin de prevenir la ocurrencia de cáncer. En hombres se sugiere moderar la ingesta de huevos, y en mujeres la de granos refinados, productos de pastelería, aceites y mayonesa.

    Promoting sustainable economic development is the basis of the Green Economy: a new vision of Agriculture, Environmental and Regional policy, shared by the wine sector, especially on some crucial issues, such as reducing the consumption of agricultural land, recognition as economically important of the green agricultural production space, spreading of organic farming, adoption of good agricultural practices. Sustainability, in fact , is not just about the use of analysis tools (carbonfoot print, Waterfoot print, etc .) but is about innovations to be introduced in the entire production process, protection of biodiversity, ethic work in the vineyard and winery. It means to disseminate as much as possible all those practices that can enable a more efficient land management also considering the recent climate changes: introduction of agro-energy and precision agriculture, rational use of water resources, creation of an observatory on temperatures and an interactive mapping system, viticultural zoning and municipal planning to make concrete balance between vitality in agronomic sector and landscape quality. Realizing such a regional geopedological mapping about agricultural soil, will allow companies to display a real-time access to all the data needed for a sustainable management of the funds, not only it would be an important tool to support the technical choices of farmers, enhancing their potential and optimizing production in relation to the current climate crisis, but would have a strong impact in terms of managing and saving water and energy resources. A strong efficacy in this context should be recognized at the "Urban Regulation Plans of the Wine Cities", which have developed since 2007 on the base of the guidelines promoted by the Italian Association Città del Vino, in order to enhance the quality of wine districts.     Both the northwest and southeast slopes of Tenerife, Canary Islands, owe their morphology to catastrophic sediment failures. An area of 4100 km2 and a volume of about 2362 km3 were involved in the failure. A 100- to 600-m-high scarp on the upper slope separates the sediment failures in the Orotova and Icod de los Vinos Valleys on the northwest coast from those on the slope. A similar (700 m high) scarp also separates the failures on the southeast slope from the failure in Güimar Valley on land. The sediment failure off Las Bandas Del Sur volcanic fan does not have any land counterparts and was the result of the failure of the front (1700 m high) of this depocenter; two generations of debris flows are mappable off this depocenter. We infer that the slopes off Orotova, Icod, and Güimar represent the front of the debris avalanche and/or creep deposits that were created during the formation of the valleys. Downslope from the debris avalanche fronts are irregular surfaced masses extending to the base of the slope. The front may define the contact between the more dense deposits onshore and upper slope and the more fluid deposits on the lower slope. Incised on the debris avalanche on the northwest lower slope are three channeled debris flows grading seaward into turbidites. Only one of these channels occurs on the southeast slope. The breakaway surface of these sediment failures was the front of the debris avalanches and/or creep. We ascribe the failure of this front mainly to its rapid buildup, although groundwater sapping also may have contributed to its failure. On the southeast slope, movement along the northeast trending fault between Gran Canaria and Tenerife also may have been a contributing factor to the failure of the front. The debris flow deposits triggered by the failure of the sediment front on the northwest slope are characterized by ridges formed either by pressure between flows moving at different velocities or by scouring; at least one volcanic edifice

Downslope from the debris avalanche fronts are irregular surfaced masses extending to the base of the slope. The front may define the contact between the more dense deposits onshore and upper slope and the more fluid deposits on the lower slope. Incised on the debris avalanche on the northwest lower slope are three channeled debris flows grading seaward into turbidites. Only one of these channels occurs on the southeast slope. The breakaway surface of these sediment failures was the front of the debris avalanches and/or creep. We ascribe the failure of this front mainly to its rapid buildup, although groundwater sapping also may have contributed to its failure. On the southeast slope, movement along the northeast trending fault between Gran Canaria and Tenerife also may have been a contributing factor to the failure of the front.     La ingesta dietaria de productos finales de glicación avanzada (AGEs) aumenta los niveles séricos y tisulares de estas sustancias, lo que contribuye a un estado de mayor estrés oxidativo e inflamación. Una intervención dietaria con bajo contenido de AGEs ha demostrado reducir el contenido de AGEs en el cuerpo. La dieta mediterránea (DM) se considera teóricamente baja en AGEs, pero los efectos específicos de este tipo de intervención en los niveles séricos de AGEs no ha sido probado. Metodología: cuarenta y siete mujeres premenopáusicas con sobrepeso u obesidad se sometieron a tres meses de restricción calórica (20 kcal por kg de peso corporal inicial) con una dieta de tipo mediterráneo que excluía la ingesta de vino. La adherencia a la DM se evaluó al comienzo y al final del tratamiento utilizando una encuesta on-line, con puntuaciones de 0 a 14 (mínima a máxima adherencia a la DM). La composición corporal, la resistencia a la insulina, los niveles séricos de lipoproteínas y carboximetil-lisina (CML) se midieron en ambos períodos. El CML sérico se evaluó mediante ELISA (ensayo inmunoenzimático). La adherencia a la restricción calórica se evaluó de acuerdo con la pérdida de peso (< o > 5% del peso inicial). Resultados: la media de peso corporal, grasa corporal, circunferencia de la cintura, colesterol total, triglicéridos y CML sérica disminuyeron significativamente, junto con un aumento en el puntaje de adherencia a la DM, aunque ninguno de los pacientes alcanzó la máxima puntuación. Hubo cambios significativos en los niveles de CML y de resistencia a la insulina en 17 mujeres clasificadas como adherentes a la restricción calórica, pero no en las 27 participantes que fueron consideradas adherentes a la DM (de acuerdo con la mejoría en el puntaje de la encuesta). Conclusiones: los niveles séricos de CML disminuyeron tras la restricción calórica con una dieta tipo mediterránea. Dado que no se pudo alcanzar la puntuación m
